My brother has been sending me a video for YEARS for a pizza pot pie that was developed at Chicago Pizza and Oven Grinder Company. The video is from 7 years ago. He sends it to me every year as a reminder. Well, I told him I'd give it a shot because it looks amazing. It's a pot pie that gets inverted, and it's like the most epic Chicago-style deep dish pizza.
You line the bottom with cheese. This original place uses Wisconsin Brick Cheese, which I do not have, but upon further investigating, Muenster cheese is a good dupe for it. So, for my version, I did a mozzarella and Muenster cheese, which turned out amazing, so I definitely recommend it. Make a delicious meat sauce. I used hot sausage and pepperoni. Then you load it up with whatever veggies you want. I did peppers, onions, olives, tomatoes, mushrooms, and fresh basil. Top it off with some pizza crust, I used my Grandma's pizza crust, then baked it off. When it comes out of the oven, flip it out onto a plate! It's amazing and exceeded my expectations. The family gave it two thumbs up, and this might be my new favorite way to eat pizza!
Grandma's Pizza Crust:
1 3/4 cup warm water
1 tablespoon yeast
2 tablespoons olive oil
2 tablespoons sugar
2 teaspoons salt
4 cups all-purpose flour
Proof 1 hour, punch down, and proof for an additional hour.
Pizza Meat Sauce:
1/2 lb hot sausage
1/2 onion, finely chopped
1 tablespoon tomato paste
1 tablespoon garlic
32 ounces tomato sauce
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon black pepper
1 teaspoon sugar
1 teaspoon boullion (or salt)
Fresh Basil
Toppings:
Mozzarella Slices
Meunster Cheese
Olives
Tomatoes
Peppers
Onions
Fresh Basil
Mushrooms
Bake at 400° F for 20 minutes.
Flip the bowl out onto a plate to invert the pot pie.
