    Yes interesting angle you present Steven. I really like the deep interest and affection you have for Indian cooking. One in the kitchen definitely not enough for all the prep needed!!!
    People often wonder why the curry they make doesn’t have that restaurant taste...you just showed them why!!!
    Layering and building flavors is a key factor.

    Brilliant video Steven 👍🏻 Do yo have a video on Mustard oil and when it should be used and at what point in the cooking process? I managed to get a bottle, but there is many mixed views on this product... any help or advice would be appreciated

      Hi Tonto, add it to a hot pan as it is the first ingredient to use in any curry and heat it to a fraction under smoking point and then turn down a little to add the first couple of ingredients. This gets rid of what some consider to be the harmful acid and also increases the flavour.
