    Salt, pepper & garlic powder. Smoker at 250. Ran the meat up to 160, wrapped in parchment and gave it a little boost to 300 until the pellet smoker got there, then backed off back to 250. Pulled it and let it rest at 205. Absolutely the best skirt steak I've ever had the pleasure of putting in my mouth, and I've eaten a LOT of it in my 59 years!
    Whoever said skirt steak and "melt-in-your-mouth" don't belong in the same sentence, has never low-and-slowed a fajita! Thank you for this video!

    Wow Kevin.. who knew you could cook skirt steak like this! I always thought it had to be cooked fast and medium rare. Glad you showed us a new method! Looked so good!! That bucket mister fan was awesome by the way!!!

      Yep, hot and fast is how I always have done it! But now I think I may be hooked on low and slow. The smoky flavor, how tender and juicy it was, has convinced me to make this again and again! But I do love the hot and fast method too :) Hope you have a wonderful day!

    My husband loves skirt steak. He likes it medium well with no pink in the center (aka dry... lol). I like it rare to medium rare with a lot of pink, though... I believe it to be the most tender and juiciest that way. I will try this method as it will make us both happy! Thank you for sharing. Also, is wrapping it in butcher paper vs. heavy duty aluminum foil a better advantage as far as end results? Or is it just preference? I feel a lot of the juices get absorbed by the paper?

      Thank you for checking this out! I like mine medium rate to medium with a good char! But I was curious how it would turn out if you smoked one low and slow and the end result was really great! This really did turn out better than expected and the smoky flavor really came through. As for wrapping, a lot is preference however this could go either way since it really didn't have a bark that needed protected so wrapping in foil works too.       @@Mankitchenrecipes I just took a look at wild fork where I get all my meats lately and they have inside skirt steak and outside skirt steak. It looks like the outside skirt steak is double the price of the inside skirt steak. Do you have any insight on this?

      Thankyou Anadi, yes skirt steak is used in a lot of Mexican dishes and usually cooked hot and fast to a medium rare. But this low and slow method turned out great! I could taste the smoky flavor and it was tender and juicy! Have a great day!

    Skirt steak looking money!! Great cook Kevin! Definitely outside the box here👍 I only use the bear mountain pellets in the Yoder, best pellets I've found so far, hold great temp, less ash... haven't found the Bourbon barrel yet...I got a mister fan too, was 99° up here yesterday and 105° behind the garage 🥵😆 feel likes near 109° call your weather back please 😆🤣 thanks for sharing, have a great one brother, you all stay safe!👍🍻🍺👊

      Hey Craig, sending some rain your way! We finally got some and it cooled things down a bit. And the smoked skirt steak came out amazing! When at uncle Mark's Safeway had 4 different Bear Mountain pellets on-sale for $10 so of course I bought 1 of each! Great smoke flavor, tender and juicy. I'll definitely do this again.     Nice! I live in south Texas and we like to soak ours in worchestire and then smoke till 120 and then and reverse sear them. Just like a steak.

    Great vid Kevin thank you. I would love to hear(or see) your reviews on different pellets. I personally have been only using pitboss pellets but i tried the Bear Mountain Bold flavor pellets and my God what a difference. Thank you again for the vid

    I wish I had seen your video sooner. Today, I smoked a skirt steak around 200 for 90 minutes, then I seared the mess out of it (super hot - 1 minute per side). It turned out great. But I'm being really picky, it could have been a little better. I think I'd dial back the smoke by about 5 percent. And then either cook at 200 for longer, cook at 225 for that same time period, or do it like you did it. Any of these probably would have tenderized it a little more. But still, it was awesome. It reminded me of something you'd expect in Abilene or that area. Like one of those restaurants where they cook everything over a real wood fire. I think I'll try your method next time. Thanks!

      Thank you, I also have a video doing it of hot and fast! Which is the traditional way and it honestly does turn out great. I'm sure yours turned out great too. I wanted to try this low and slow, and discovered PitmasterX did one so I had to try it and it came out amazing! Honestly! I will definitely do it like this many more times because you really pick up the smoke flavor. And I'm sure you did, but you gotta cut these against the grain, otherwise it can be stringy and tough to eat. After I made this I immediately went out and bought a couple more and they are in my freezer just waiting. Thanks for checking this out!

    is there a reason for putting it on the far left of the grill as opposed to middle or closer to the smoke stack?

      Thanks for checking this out! My left side is my cooler side. Near the smoke stack is hotter, and the fire pot is in the center. Just a personal preference.

    Crazy to hear this I just slow smoked mine for 8 hours. I usually do it for four hours. I took it off after 6 hr was to blood. Never done it for 8 hrs only 9 hours shagging. So I typed in 8 he smoked beef fajita this cam up. All is u need is honey mesquite burn to coal's then put a log on it put meet in close lid open 1 hole have it with a avocado & smoked beans wash it down with sparkling water & a stoggy. Dam good. I am in my early 40s retired & cook once a week. Life sucks

    It don't matter if it's slow cooked or fast cooked that steak should be medium rare
