    It is "cooked like a brisket" but I think I remember from another L&L video that you take it off the cooker at a lower temperature than a typical brisket. Do you mind sharing the IT when you remove from the heat source?

    I'd personally call that a top blade roast, not a flat iron. Looks effin delicious either way though.

      It is top blade, since there’s still the connective tissue between the two steaks

      Yes we order it as a top blade but we think its more marketable on the menu as flatiron
