    It is better not to " beat" at the end, after pouring egg white and cream into puree. You just "Fold" it.

    2 tablespoons lemon juice
    Water
    Sugar
    2 egg WHITES
    Salt
    Whip it up
    1/2 cup heavy amul cream
    1 tablespoon gelitan
    Mix the puree well
    Pour the mango puree
    Put the egg white first in the bowl
    Pour the cream second in the egg white bowl
    Serve in glasses
    Set for 2 to 3 minutes
    Whipped cream
    Garnish with cherries
    Mint leaves.

    you can fold whites with help of silicone spatula it make lot of difference rather than spoon...

    You can use agar agar in place of gelatin. Agar agar is derived from seaweed and is vegetarian.

      Gelatin binds the ingredients together...
      Its like using a glue to stick.the papers....

    Gelatin is a good source of protein derived from bones and skins of animals. It is not necessary to use egg white.

      +Koki Mehta use agar-agar. It is a jelly-like substance, obtained from algae. Available in grocery shop. Some people call it china grass.

      main source of Gelatin is Pectin and can be found in plants too. you get Gelatin which is not made from animal bones in market.

    My mum lives in Ahmedabad she uses Amul Taaza Cream and it came out really well for icing cakes, making mouse....

      yes, you may use aquafaba or chickpeas water. beats up like eggwhites and is quite easy to use
