    Hi Vanessa, thanks for the lovely video. I'm originally from the coastal town of Mombasa in Kenya, but living abroad. I have cooked pilau so many times, but today I learnt something new. I always boiled my beef or chicken with plain water and salt. I will try your method with the mix of onions, tomatoes & ginger for the broth. I will soon give you a feed back. Nice work 👍👌ps: I always cook the rice half way, then cover with foil and put it in the oven (Warm air) 120°c for a few minutes. Please advise on covering the Pot with a wet cloth. I have never tried this

    • @swahilifood
      @swahilifood  2 года назад +1

    • @swahilifood
      @swahilifood  3 года назад

      Hi Aziza ☺️
      Swahili pilau mixes have cumin, cloves, cinnamon, whole black pepper and cardamom.
      If you want to make your own whole spice mix I’d say, 2 tbsp cumin, 1 tsp cloves, 2 cinnamon sticks broken into smaller pieces (1 inch) 7-8 cardamom pods, 1 tsp black peppercorns.
