We've made this several times now and it is always a hit. The flavors of the spice blend are quite fantastic. The cloves and cinnamon back up the cumin wonderfully. The fried onions are also a delicious addition. I experimented a little by increasing the amount of spices by about another third. I also added berbere (1 tblsp) powder and some chopped anaheim chiles. Everything about this recipe is amazing and I thank you for sharing it!

Hi, I prepared this biriyany today and it was fantastic. I made some minor additions. I added whole spices at the beginning and at the end, i sprinkled some saffron with a splash of rose water. The end result was great. Thank you for the recipe.
Hey Vanessa enjoy your cooking I am an Omani origin was born in Msa and Alhamdulilah I too love cooking all sorts of foods around the globe however when it comes to Biriyani I think the best is Hyderabadi Biriyani in the world at least for me and I'm sure if you try it you will agree with me as well, its full of flavours it has fresh herbs corriander ,mint and the marination period with the way its slowly cooked makes a big whole difference I find the swahili biriyani simply tastes tomato pasty although I do add like some tomato paste in the Hydrabadi Biriyani when I cook for some sweetness but not that much..BTW what is Mala? is it yoghurt?

But hold on folks, there is a dark horse in the race and its the Spanish with their Paella and among the ingredients they are using "Zafaran". This might spring a surprise, who knows even the Chinese are in the race with their own BIRIYANI. Nice one!
Let me start off with I love the look of this dish and will be trying it. For me this dish is Rice and curry rather than biryani. The best way to describe a biryani is that it's a pilau rice with marinated meat layered. That said if I made this curry of yours and reduced down enough I would mix it in with the rice and that to me would be biryani enough. But each to their own. Thank you for the recipe.

Just did a lot research into Swahili cusine after seeing a lot of Indian names (chapati, biryani), spices and ingredients... I think Indian immigrants to Africa have had a significant impact on the food culture there... A great marriage of cusines! Anyway will try this...partial to Indian hyderabadi biryani though!

So this is basically just a tomato based chicken gravy dish over flavored rice. I wouldn't call it Biryani, since biryani is meat cooked with rice in the same pot with complementing herbs and spices. I like the innovative touch, but I think this differs from the original authentic way of cooking real biryani. Authentic biryani has saffron, a lot of different herbs and spices also plus its cooked with a lot of heat internally to retain the flavors. I like the Swahili style as well, I think it's simpler, but I just don't think it's the same. Sorry if you feel offended, just stating my opinion. I admire your style of cooking. Thank you for sharing your wonderfully presented meal.

Everyone is entitled to their opinions around here and we are totally ok with that 💪 This was how I was taught to make Swahili Biriyani over 25 years ago 😊 I stuck to the recipe because I wanted to make sure I always the same results. That said, I do make a few changes (when I’m in the mood) like adding saffron and rose water, extra ghee to the rice while, yep layering it. I also add mint sometimes, again if I’m making it extra special. Swahili cooking doesn’t go overboard with spices which is what I love
Definitely this wouldn't pass for biriyani in India n Pakistan but this is what the Swahili refer to as biriyani and that's how they have been doing it for centuries (indian influence ofcos). All in all l find the Indian biryani very technical n tedious cook to say the least but the taste is indeed phenomenal. Biriyani war is a never ending one though even Indians themselves never seem to agree which is the best, authentic n so on as some spices n ingredients vary depending with region(tomatoes in biryani always elicits alot of debate from Indians from what l always see in RUclips comments)

Mauritian and Pakistani biryani seems to be similar and tastiest. Swahili one is good too, but looks a separated type biryani.
