Why Purple Cauliflower?

  • I am excited to share my latest find with you from Meijer.
    I was in the organic section and had to have this one.
    Purple cauliflower has more antioxidants than regular white cauliflower and is high in Magnesium and Potassium.
    The purple color is NOT dyed.
    The color comes from Anthocyanin which is found in red wine and red cabbage.
    It has a strong nutty flavor.
    I kept it simple with Organic Virgin Olive Oil, Red Wine Vinegar, and Celtic Sea Salt.
    This is a great side and is thick enough to be made as a primary.
    This is light and exactly what we need going into spring.
    I broiled it for 10 minutes at 450 degrees.
