The volume differences are done in the mix afterwards or maybe this piano track is isolated from the full song because that isnt natural sounding sound fluctuations

Usually these tracks come from guitar hero because the bands have to submit the individual tracks for the game and that's how you'll see them appear.

Yep. It's spill. The drums, bass, and piano were all recorded at the same time, and the drums are so loud that the piano mic picked them up.

I have what EMI supposedly published back in 1992, but there's a lot of notes missing even though this was supposed to be transcribed.
Googling for "we are the champions musescore" will help. musescore is free music notation software.
