I was here in Morocco. The food was wonderful and the people were very nice. What I liked was pastilla with fish, tagine with plums, and different beautiful juices. Maybe he would say to him, “Zazaza.” Morocco is very beautiful.
@@OTWD_yt Regarding Ifrane, you have to go there when it snows, pleasant little village nested in the middle atlas, not more than 1 hour away from Fès.
They came to Morocco fleeing cold wether in England and to see the traditional Moroccan architecture. Ifrane is not different from their cities and is freezing cold in winter.
So first you had Maakouda which is a potato cake. So mashed potatoes seasoned with cumin, paprika, garlic and parley, shaped into patties then dipped in a batter and fried in veg oil. Street vendors normally sell it in bread buns as a cheap and filling yet delicious snack. The first soup you had is Bessara made from Fava beans ( sometimes other dried beans or dried peas can be mixed in) it is served with generous amounts of olive oil, ground cumin, paprika and ground chilli. Some Moroccans consume it for breakfast on their way to work as it can be quite filling as you rightly noted. It is also eaten for lunch as a main meal. The second soup you had is Morocco’s most famous soup. If cooked right, it is absolutely delicious. I think you were served the vegetarian option. The original recipe has cubed lamb or beef, celery, coriander, parley onions and a variety of spices. It is tomato based. Harira is served almost daily during the month of Ramadan. The carrots you had are either boiled or steamed then marinated in Shermoula a Moroccan marinade made out of herbs, cumin, paprika, lemon juices and olive oil. The spinach is cooked with similar spices plus preserved lemons and both these dishes are served as sides. The Bastella is one of Morocco’s signature dishes. It is a chicken pie. The outer layer is a pastry similar to filo pastry and the filling is made out of chicken, caramelised onions, eggs, and a variety of spices like saffron ginger and Arabic gum. There is also a layer of roasted ground almonds seasoned with cinnamon, icing sugar and a hint of rose water. Once baked the pie is of course served with another dusting of cinnamon and icing sugar. Moroccan cuisine is famous for its sweet and savoury dishes. Combining sweet and savoury sounds strange to a lot of people but when done right it is a marriage made in heaven. Other sweet and savoury dishes you could try while there if you haven’t yet is the lamb and prunes tajine 😋one of Morocco’s best specialities. The Merouzia tajine if you can find it is also a must. Beautifully savoury and honey sweet at the same time😋 The sweets you had with the sesame seeds are called Shebakia. Made with flour ground fennel and cinnamon, sesame seeds, ground almonds, orange blossom water amongst other things. They are shaped, fried then dipped in either honey or a mixture of sugary syrup and honey. This is also a Moroccan must during the month of Ramadan. Selou is another Moroccan ramadan speciality which you probably haven’t tried yet. It should be available as Ramadan is fast approaching. After having Harira, Moroccan will normally have sellou with Atay the Moroccan mint tea that you so like. Sorry for the long message. Enjoy the rest of your tour. 😉
