First I listen with the score, then I do harmonic and composition analysis, then I try to find solutions to trills, fingerings and other technical problems and only then I start the process of memorisation. First the more difficult passages. In the end I put it together like a puzzle. If I start a piece with playing it through I feel like I am cheating and I am just bussy reading notes and trying to survive instead of really trying to figure out what is going on.
