I have a question though, I will add coconut milk is it possible to induce the coconut flavour by adding grinded coconut? If you recommend that should I decrease the amount of almond flour? Hi Eli. Yes you could use some coconut flour, or grind down some dessicated coconut in place of some of the ground almonds. But remember that coconut flour absorbs much more liquid than almond flour, so you may have to adjust the amount of liquid in the recipe too.
Good morning Geoff, delicious looking cookies, golden syrup is one of my favourites too…. Do you think maple syrup would work as an alternative? I only ask because I got a lovely sized bottle from Costco before Christmas, but I’ve got lots of golden syrup too 😊….. Thank you in advance …. Hi Jan. Thanks. I am not too sure about maple syrup, since it seems to be of a thinner consistency. It would also change the flavour quite a lot, and will be less sweet. Personally I am not a fan of maple syrup, though I do use it some times. It was quite mild here yesterday, but now very windy and the temperature is about to drop again.
Good morning from a freezing Ireland ,fabulous recipe ...just one question , could double cream be used . Percy always uses double cream on his porridge and corn flakes ,tea and coffee ..The lads haven't surfaced yet ,it's a Saturday .

When I sub coconut flour for almond flour, I generally use 1/3 the weight, :)

Hi Sir Barney et al. It is rather cold here too. I think double cream would be fine, the mixture will be slightly stiffer as a result.
