I absolutely love me some mavi, I am not in Puerto Rico until I have my coco frio, mavi, pan de agua, and mofongo. I just wish that someone could come up with a way to sell this stuff. They would make some major bucks
Right?! Those are some of things you just have to have when you go there. I'm partial to getting the coconut and passion fruit ice cream from the street vendor carts lol I thought about selling Mavi at one point, but then the licenses and stuff idk. There is one seller of Mavi, but it tastes off and bleh. Would definitely need to completely pasteurize else those bottles be poppin'; happened when I sent a small bottle to a friend 😅
It's a lot for sure, but not as much as how some make it in barrels dumping multiple 1lb bags in lol The bark is extremely bitter where it's completely not palatable. The initial sugar to fuel the 3 day fermentation is to combat that bitterness so the other portion can be used to sweeten to taste.
Sorry, but I'm not; I used to visit family a lot there years ago. I asked my fam and they said that they think that families there get it from local stores most likely. Sorry, I'm not too helpful. It'd be awesome to have some sources right from the island for sure!
That's due to the yeast I used. Mangrove Jacks MA33 Yeast yields very little foam compared to other strains. It was surprising how little there was when I first used it, but the little guys were working hard doing their thing. I've done this with Lalvin D47, and it went nuts with foam during the process where it would come up through the airlock.
