  • Unni appam also known as nei appam is a tasty treat made from raw rice flour and jaggery with the addition of mashed ripe bananas and flavoured with cardamom.They stay good for a couple of days. The heavenly taste of the crisp outside and the spongy inner layers is loved by all. The ingredients are
    Rice flour 1 cup
    Jaggery 1 cup
    Ripe banana 1
    coconut pieces 1/2 cup
    Cardamom powder
    Ghee/oil

    Ma'am which appa pan would you suggest. Iron or non-stick? Is yours a non-stick appa pan?

      I have used a non stick pan. iron is definitely healthy

    I always used to soak and grind rice to make Appam but I tried your method It is not only easy and less time consuming but Appams have come out very soft Thank you so much

      You can deep fry in a kadai. Take just enough oil, and pour one at a time and fry

    Rava can be added? Can make as mini dosa also?

      We don't add rava. Yes you can make, but on a low flame as the batter might stick to the tawa because of the jaggery

    Ma'am, I have an Appakaaral. This recipe requires fermentation for 3 hours. Can an instant version of this be made using the Appakaaral method wherein we don't have to wait so long? If so, then what are the modifications to be done in the recipe?
    I came across an instant method you had posted in the month of December 2019. But in that video you had directly fried them in oil. Can that recipe be followed using the Appakaaral method?

    Ma'am earlier you had told that the ratio for wheat flour to rice flour is 3:1. In that case how much jaggery do we add Ma'am?

      The batter might have been loose. Please make fairly thick batter and try.

    Good afternoon Geeta. I have been making nei appam for years for our festivals. But off late the nei appam I make doesn't come out in good shape. Like a bowl and lid it comes. Please advise what is the mistake. It used to come put so well earlier

      Do it on a lower temp, maybe you are cooking on high heat Prabha

    In my hurry to do neivedyam for Aadi velli today, I forgot to roast the rice flour,but nevertheless tha appams came out very well.

    Can I keep this batter overnight for fermentation... Because I want to make them in the morning.... If kept more than 3-4 hrs... Is it ok??

      Yes. you can keep it in the fridge in hot weather

    I savoured these every Karthik Pooja at my neighbour Krishnan's place. But I believe they used special Keralite banana. Loved it.

      No. Just lightly roast it till it becomes hot

    Gita, could you pls include the exact amount of water you used in the recipe, to make the jaggery syrup and later while grinding. It would help beginners to get the right consistency of the finished batter.

    So a good recipe. Could you please make videos, how to cook idli, dosa, upma etc with dals and millets instead of rice. 2.how to cook brown rice and millets like rice. very healthy and good to know, how to use millets in our diet daily.

    Hi madam unniyappam and nei appam are two different sweets. For nei appam we won't use banana

    Namaste! Just yesterday I tried the nei appam it came out well.but not so liberal with ghee. I wish you to teach us some recipes with bottle gourd as I know only one method of making curry with a paste of rice flour sugar and milk. I like the way you teach us thank god you adopted English language for this a knife can cure a person as well as kill him if not for the favour of the language how can we all from all walks of life come together? The summer also entered do show us juices and lassis using different fruits and vegetables.gita! I love cooking but now I feel my hands are tied a little bit.you never go for eloberate cooking and the things you use are mostly available in our kitchens which is a boon in a way.be happy and smiling as always.

      Add some wheat flour to the rice flour. They will be soft

    Can you tell me the measurement for wheat flour i need to substitute for rice flour? Rice flour appams tend to be harden up after few days. Also can you suggest another fruit instead of banana here? Thanks.

    Please give me the recipe for making an instant version (without having to add baking soda) of this Appam Ma'am. I wanted to make this Appam tomorrow but I really don't have much time Ma'am.

      I haven't added soda Amrita. You can just make with wheat flour too. Process is same. no need to roast flour. Add a little rice flour for crispiness

      Kitti, in case you dont have mold try and shallow fry it on a non stick pan or tavva. You can also drop small balls of batter in a oil filled kadai with a big spoon.

      You can keep in fridge after a few hours

    If we use the ready made rice flour then the appam doesn't come out well as in the ready made flour it doesn't have the stickiness . Grinding the soaked rice at home gives better ones
