I had to be really creative with the banana leaves. The first couple packets had to be redone, because they were too big. It didn't take too long to get the hang of it. I had just enough banana leaves for all the mix I made. I only had to wrap one packet out of foil, at the very end. I see why you need to have the stalks at the bottom. I never had to add water. I don't think I had too much water, just enough to cover the stalks. Oh, I used kale stalks, since my banana leaves had no stalks. Thanks for sharing this old way of making moimoi. I grew up eating moimoi and akara, so this is just what I needed to start my New Year off right.

This looks very nice. I've never known how to use leaves to do this. I like how you use the broken off stems as a base for the wrapped mai-mai, very environment friendly. I also like how you explained the importance of washing the leaves properly, as I am very icky. So thanks for that. Even though some may not see it as 'traditional', it is definitely very healthy to have ginger and garlic in your food. So I like how you included these 2 ingredients, as their health benefits are significant. I will try it out, but don't have the courage to add the milk. Maybe if I taste your own first...😜
