I have a very similar recipe. My only tip is to soak the raisins in warm water while grating carrots. Drain them well before adding to the salad. They’ll plump up and be better than the occasional dried out raisins I find in the packages now days. I truly enjoy your channel
The carrot salad is so good! I learned a trick to make the raisins plump and sweeter by soaking them in pineapple juice an hour or so before making salad. Glad Granny is doing better!
When my kids were you, before they started school, we would frequently eat dinner at my momma and daddy’s or my in-laws. And always Sunday after church. Looking back, I was so very fortunate and blessed. They wanted to see the babies and the babies wanted to see them! Now, I see my grown children at least every other day! God is so good!
Raised in the Deep South and carrot salad was a staple. It's definitely better when chilled for several hours. Another staple was pear salad- a spoonful of mayo in a canned pear half, then sprinkle the top with grated cheese and chill.

Hi Tipper and Matt. One of the reasons I enjoy your videos is you remind me of things I forgot. Fond memories of trains, maybe words I rarely hear. Even though I spent most of my life in California, it doesn't matter. 60 years ago, California was very different, small town by the beach, pre tourists. A train with vegetables ran along the beach by our house. He would ring the bell for me and my brother. Now there are chic boutiques and cafes. I retired and got out of there. Tonight you reminded me of carrot and raisin salad. I used to eat this all the time. I can't even remember the last time I had it. Maybe 30 yrs. I used to cook onions in a skillet and put cheese on top. I learned to cook early. Blind pig and the acorn is very special to me. Thanks for the videos. Anna from Arkansas.

I recall apple, carrot raisins salad. If it had stopped there it would have been healthy, but then the recipe called for above all things cool whip. Well, there went all the nutrition right out the window. It tasted good though. 🤷♀️
My momma used to make that pineapple, raisin and carrot salad. She used the purple ones usually and sometimes would make it without the pineapple. I love its fresh taste!
I just pulled out some of my old church cookbooks from days gone by. I miss those simple meals that have real food without weird ingredients you have to buy or everyone on special diets 😂 It was so nice to be able to go to dinners and everyone bring a dish and nobody complaining about what they cant eat😂. Im going back to simple meals from those cook books. I forgot about some of those meals and they are just so simple. We have 3 pear trees so i make my carrot salad with pears😊
Church cookbooks are the best! I have a number of them, and go to them often. I agree with you --- simple foods and meals are wonderful. And I can remember a time when people didn't have so many foods they couldn't eat. Not like today.
I have eaten carrot salad all my life just the way you made it. Maybe a little more mayonnaise. Once the grocery store deli became popular, most sold carrot salad and my family would go by and pick up a container to take to church or a last minute meal. Hope y'all enjoy your supper.

I grew up with carrot , raisen, and carrot salad. I now put golden raisins or dried cranberries. We also had baked onions. We crumbled A bullion cube in ours. It was the only time we used bullion cubes! Both sides are delicious.
My grandmother made that and so do I. We added onion, celery and butter and toasted the bread peices.We sometimes cooked it on the stovetop. We called it breaded tomatoes. I love it still.

I liked putting a spoon of sugar in mine. she didn't heat them. I like carrot raisin salad. haven't had it with pineapple. I don't remember what dressing was used on it though.
That was a standard recipe at our house, too, when I was growing up. I didn't care for it. We had to clean our plates anyway. Besides, I didn't like to hurt my mom's feelings. One day my big sister, knowing I disliked it, slid mine onto her plate when Mom went to the kitchen for something. Being an ungrateful brat, after that, whenever we had them, I'd wait until Mom was out of the room and slide mine onto my sister's plate. She'd slide it back, and we'd play "hot potato" that way until Mom came back. Whose-ever plate they were on when she came through the door had to eat all of them. 😄
Hey Tipper. Those baked onions and cheese are right up my alley. And the carrots and pineapple with raisins sounds pretty good too. I typically only eat raisins by themselves and not mixed up with other foods though. I'm glad Corie and Austin are living close by to y'all. God bless

We love onions and that casserole sounds good. I don’t make carrot salad real often because I’m the only one who likes it in my family. I have used Ina Garten’s recipe and it’s pretty much the same. Matts running his tank on empty, bout like my truck earlier today. Got 2gal of gas loaned to me, so could drive to the fillin station, took the can refilled it and put gas in my truck. Took the can back to the guy I borrowed it from. Love small town life.
We love sweet potato and pineapple salad, cold from the fridge on hot summer days. Ingredients 3 cups cubed bite sized Sweet Potato 1/2 cup Walnuts 1/2 Green Pepper 1/2 cup Pineapple Pieces Salad Dressing 1 1/2 tbsp Oil 1/4 cup Pineapple Juice 1 tsp Lemon Rind/zest Black Pepper Instructions Cut sweet potato into bite size pieces. Cook until just soft but still firm. Chop green pepper. Coarsely chop walnuts. Drain pineapple pieces. Reserve ¼ cup of juice. Lightly mix all the salad ingredients together. Salad Dressing Mix all the dressing ingredients together. Pour over the salad. Serve cold.
Thank you for the sweet memories that the 🥕🥕 carrot salad brought back to me. During my childhood, instead of mayonnaise, we added several spoonfuls of frozen pineapple juice concentrate. Then as an adult,I learned of this mayonnaise recipe . Another variation instead uses peanut butter and garnishes with peanuts. (But my favorite was the way I grew up with a sweet strong pineapple flavor 🍍😋)

My sweet Mom often made that carrot salad using a combination of mayo and sour cream. It is one of my favorites. So refresing and light any time of year. It was especially good with ham, pork or BBQ chicken.
I used to make carrot salad when my children were small. My daughter made it just last week My son was so happy to see it. He asked why we don't have it more often don't have it more often. I'm sure that my family will like the baked onions. They look good to me.
My Mom made the carrot salad and it was always a hit. It’s one of her dishes I can make and it actually tastes like hers did! My Mom was a great cook and we didn’t grow up with lots of money but we always ate good!,❤

My Mama made baked onions just like that but minus the cheese. Always one of my favorites. She also made a carrot salad with raisins but with apple chunks instead of pinapple with a little mayo and a sprinkle of sugar.
I’ve lived in eastern NC my entire life; I’m 45. I grew up eating carrot salad. It’s one of my favorites. My family always liked having it especially for Easter. It was one of my maternal grandmother’s favorite side dishes. Sometimes she’d fix just that for a small lunch. My mom & I still make it on occasion, so yummy. 😋

My grandma and my mom called the carrot, pineapple salad......health salad. It was made with a small can of crushed pineapple, shaved carrots, and raisins. Mixed mayonnaise with a teaspoon of sugar. It's made early in the morning, so the flavors can marry. It's delicious. I haven't made it in years......thanks for reminding me of a great old salad recipe. ❤❤❤

I made both of these recipes tonight for dinner and I loved the pineapple dessert (no one else liked it) and my husband loved the onions (I am not an onion person). In my family, and I did it when raising mine, it was common for us in the summer to have a Meat and Salads Meal. It could be Fried Chicken, Sausage, or anything we grilled or barbecued, but the star of those meals was the assortment of salads and often those salads included meat salads so no other meat was made. Salads such as tuna, chicken, ham, shrimp, or steak salads. We would have 4-7 different fruit or vegetable salads just for one family, but add in the extended family and there may be 30 different ones! Examples - Carrot Raisin Pineapple Apple Celery Pecan Cucumber Dill Sour Cream Fruit Salad (grape cherry strawberry banana apple orange pineapple coconut pear pecans or almonds in whipped cream) Spiced Pear halves with Mayo and Sharp Cheddar Cheese on top and a bed of lettuce 7-Layer Salad Pea Salad w Red Onion Boiled egg and Cheddar Cheese cubes Broccoli Salad w craisins red onion golden raisins and sunflower seeds Tri-Color Cole Slaw Pasta Salad Egg Salad Corn Salad Potato Salad Beet Salad w Orange Cherries Almonds Mushroom Onion Couscous Salad Spiced Pickled Peach halves with Bleu Cheese and Black Cracked Pepper on a bed of Arugula with diced Ham and a Red Berry Red Wine Vinegar Vinaigrette Bananas in Lemon Curd or Lemon Sauce Fresh Figs with Sweetened Whipped Cream Cheese and Pistachios with Maraschino Cherry Juice or honey drizzled over top Cottage Cheese and Pineapple, etc... We also had Watermelon and Cantaloupe Fortunately, some of this used half Lemon Yogurt and not all Mayo. This kind of summer meal was my children's absolute favorite 😍🤪 It was a huge favorite of all of the generations. We used a lot of ice keeping these cold in the shade of a Texas Summer for a picnic! There would be 20-30 large ice chests for an extended family picnic or lake outing! And of course, there were drinks, crackers, bread, chips, pies, and cakes! Way back in the day this is when Station Wagons were so handy! I sure miss these large family gatherings with 40 children running around and the men and women talking. So many lawn chairs and blankets. You always knew when PawPaw or Granny were speaking because everyone got quiet to listen 🥰💖💞

I love carrot slaw! I am gonna try the onions. Sounds wonderful! We love fresh pineapple in my house. I always root the pineapple tops. Then I plant them in tropical soil and hand them out as house plants to friends. I usually put one in a large pot in my flower bed for the summer. They get Hugh and beautiful outside.
I will be making the baked onions. I grew up in a home where an added onion and a potato will be added per person. Everyone left the table full and there was extra for later or lunch the next day. As for the carrot salad, I make a similar carrot salad, I don't care for raisins, but I like craisins, grapes, apples and pears as substitutes for the raisins. Love onions. Never thought of simply baking them. So easy…versus babysitting them in a frying pan. I bet you could just cut them in chunks too instead of slices. It’d be a different texture experience of course.
My daughter loves to bake bread so I'm always on the lookout for good bread machines! Thank you for the make and model of yours ❤! I'll definitely be watching for your model! The 2 she has now are okay; just not great. We got them on a guess from a thrift store. Research on bread machines can be very time consuming because people's opinions vary a lot. We live in an area that doesn't allow chickens / farm animals. But her friend does and she hates baking bread. So they trade! Eggs for baked breads. Works out well! We do trades with other people as well. I live in a tiny house 220 sq ft.I renovated my kids shed into my little cottage (it wasn't usable at the time). Been here 7 years now. I got her re- interested in square and container gardening plus hydroponics and greenhouses. It really works with our limited space!

My mom used to make carrot raisin salad! Sometimes she'd put pineapple in it and sometimes mandarin oranges. She always used dark raisins. She usually added miracle whip and some sugar. When I make it, I use mayo, no sugar and pineapple or oranges. Yum! The onion dish sounds really, really good! I'd probably cook the onions until they carmelize - just to see if it tastes good.... thanks for sharing 🤗
The carrot salad is much better with sour cream. We used to have that same carrot salad but with sour cream in the summer. My great-grandparents and great-aunt and uncle grew grapes that then were dried into raisins. Big, plump, sweet and juicy. They were wonderful in the carrot salad, better than the hard things in the red box. ;D
Onion casseroles are favorites around here, and so is carrot salad! We usually shredded the carrots, and the dressing is more of an oil/honey/vinegar. But "yes" to the dark raisins, and pecans! *swoon*
I grew up eating carrot raisin salad. My Mom put walnuts in sometimes or pineapple, the mayo or a little sour cream if we had no mayo. And, sometimes if we were having it with Easter Ham she would sprinkle just a little cinnamon. It was always a favorite summer salad and not expensive to make. You can use drained canned crushed pineapple if it is what you have on hand. Save the juice to add to iced drinks.
Carrot Raisin salad is one of my favorite salads. I make using a fine grinder for carrots and use crushed pineapple. We have it every time we have fried chicken.

That was a standard recipe at our house, too, when I was growing up. I didn't care for it. We had to clean our plates anyway. Besides, I didn't like to hurt my mom's feelings. One day my big sister, knowing I disliked it, slid mine onto her plate when Mom went to the kitchen for something. Being an ungrateful brat, after that, whenever we had them, I'd wait until Mom was out of the room and slide mine onto my sister's plate. She'd slide it back, and we'd play "hot potato" that way until Mom came back. Whose-ever plate they were on when she came through the door had to eat all of them. 😄
We called it “scalloped tomatoes” and used a quart home canned ones. Sometimes a thinly sliced sweet onion, briefly sautéed, would be added.

Hey Tipper. Those baked onions and cheese are right up my alley. And the carrots and pineapple with raisins sounds pretty good too. I typically only eat raisins by themselves and not mixed up with other foods though. I'm glad Corie and Austin are living close by to y'all. God bless

We love onions and that casserole sounds good. I don’t make carrot salad real often because I’m the only one who likes it in my family. I have used Ina Garten’s recipe and it’s pretty much the same. Got 2gal of gas loaned to me, so could drive to the fillin station, took the can refilled it and put gas in my truck.
Took the can back to the guy I borrowed it from.

We love sweet potato and pineapple salad, cold from the fridge on hot summer days.
Ingredients
3 cups cubed bite sized Sweet Potato
1/2 cup Walnuts
1/2 Green Pepper
1/2 cup Pineapple Pieces
Salad Dressing
1 1/2 tbsp Oil
1/4 cup Pineapple Juice
1 tsp Lemon Rind/zest
Black Pepper
Instructions
Cut sweet potato into bite size pieces.
Cook until just soft but still firm.
Chop green pepper.
Coarsely chop walnuts.
Drain pineapple pieces.
Reserve ¼ cup of juice.
Lightly mix all the salad ingredients together.
Salad Dressing
Mix all the dressing ingredients together.
Pour over the salad.
Serve cold.
Sometimes I'll toss in a handful of dried cranberries or fresh white seedless grapes too. Yummo!

Thank you for the sweet memories that the 🥕🥕 carrot salad brought back to me. During my childhood, instead of mayonnaise, we added several spoonfuls of frozen pineapple juice concentrate. Then as an adult,I learned of this mayonnaise recipe . Another variation instead uses peanut butter and garnishes with peanuts. (But my favorite was the way I grew up with a sweet strong pineapple flavor 🍍😋)

My sweet Mom often made that carrot salad using a combination of mayo and sour cream. It is one of my favorites. So refresing and light any time of year. It was especially good with ham, pork or BBQ chicken.

My Mama made baked onions just like that but minus the cheese. Always one of my favorites. She also made a carrot salad with raisins but with apple chunks instead of pinapple with a little mayo and a sprinkle of sugar.
I’ve lived in eastern NC my entire life; I’m 45. I grew up eating carrot salad. It’s one of my favorites. My family always liked having it especially for Easter. It was one of my maternal grandmother’s favorite side dishes. Sometimes she’d fix just that for a small lunch. My mom & I still make it on occasion, so yummy. 😋

My grandma and my mom called the carrot, pineapple salad......health salad. It was made with a small can of crushed pineapple, shaved carrots, and raisins. Mixed mayonnaise with a teaspoon of sugar. It's made early in the morning, so the flavors can marry. It's delicious. I haven't made it in years......thanks for reminding me of a great old salad recipe. ❤❤❤

Carrot Raisin Salad - mmm hmmm. In my family, and I did it when raising mine, it was common for us in the summer to have a Meat and Salads Meal. It could be Fried Chicken, Sausage, or anything we grilled or barbecued, but the star of those meals was the assortment of salads and often those salads included meat salads so no other meat was made. Salads such as tuna, chicken, ham, shrimp, or steak salads. We would have 4-7 different fruit or vegetable salads just for one family, but add in the extended family and there may be 30 different ones! Examples -
Carrot Raisin Pineapple
Apple Celery Pecan
Cucumber Dill Sour Cream
Fruit Salad (grape cherry strawberry banana apple orange pineapple coconut pear pecans or almonds in whipped cream)
Spiced Pear halves with Mayo and Sharp Cheddar Cheese on top and a bed of lettuce
7-Layer Salad
Pea Salad w Red Onion Boiled egg and Cheddar Cheese cubes
Broccoli Salad w craisins red onion golden raisins and sunflower seeds
Tri-Color Cole Slaw
Pasta Salad
Egg Salad
Corn Salad
Potato Salad
Beet Salad w Orange Cherries Almonds
Mushroom Onion Couscous Salad
Spiced Pickled Peach halves with Bleu Cheese and Black Cracked Pepper on a bed of Arugula with diced Ham and a Red Berry Red Wine Vinegar Vinaigrette
Bananas in Lemon Curd or Lemon Sauce
Fresh Figs with Sweetened Whipped Cream Cheese and Pistachios with Maraschino Cherry Juice or honey drizzled over top
Cottage Cheese and Pineapple, etc...
We also had Watermelon and Cantaloupe
Fortunately, some of this used half Lemon Yogurt and not all Mayo. This kind of summer meal was my children's absolute favorite 😍🤪 It was a huge favorite of all of the generations. We used a lot of ice keeping these cold in the shade of a Texas Summer for a picnic! There would be 20-30 large ice chests for an extended family picnic or lake outing! And of course, there were drinks, crackers, bread, chips, pies, and cakes! Way back in the day this is when Station Wagons were so handy! I sure miss these large family gatherings with 40 children running around and the men and women talking. So many lawn chairs and blankets. You always knew when PawPaw or Granny were speaking because everyone got quiet to listen 🥰💖💞

I love carrot slaw! I am gonna try the onions. Sounds wonderful! We love fresh pineapple in my house. I always root the pineapple tops. Then I plant them in tropical soil and hand them out as house plants to friends. I usually put one in a large pot in my flower bed for the summer. They get Hugh and beautiful outside.
I will be making the baked onions. I grew up in a home where an added onion and a potato will be added per person. Everyone left the table full and there was extra for later or lunch the next day. As for the carrot salad, I make a similar carrot salad, I don't care for raisins, but I like craisins, grapes, apples and pears as substitutes for the raisins. Love onions. Never thought of simply baking them. So easy…versus babysitting them in a frying pan. I bet you could just cut them in chunks too instead of slices. It’d be a different texture experience of course.
We've made that salad in our family for over 50 years; however, we never used pineapple. Momma served it with a curry chicken dish. Yummy
My daughter loves to bake bread so I'm always on the lookout for good bread machines! Thank you for the make and model of yours ❤! I'll definitely be watching for your model! The 2 she has now are okay; just not great. We got them on a guess from a thrift store. Research on bread machines can be very time consuming because people's opinions vary a lot. We live in an area that doesn't allow chickens / farm animals. But her friend does and she hates baking bread. So they trade! Eggs for baked breads. Works out well! We do trades with other people as well. I live in a tiny house 220 sq ft.I renovated my kids shed into my little cottage (it wasn't usable at the time). Been here 7 years now. I got her re- interested in square and container gardening plus hydroponics and greenhouses. It really works with our limited space!

My mom used to make carrot raisin salad! Sometimes she'd put pineapple in it and sometimes mandarin oranges. She always used dark raisins. She usually added miracle whip and some sugar. When I make it, I use mayo, no sugar and pineapple or oranges. Yum! The onion dish sounds really, really good! I'd probably cook the onions until they carmelize - just to see if it tastes good.... thanks for sharing 🤗
The carrot salad has been a staple in our family. I started using dried cranberries years ago. Prefer them over raisins.

The carrot salad is much better with sour cream. We used to have that same carrot salad but with sour cream in the summer. My great-grandparents and great-aunt and uncle grew grapes that then were dried into raisins. Big, plump, sweet and juicy. They were wonderful in the carrot salad, better than the hard things in the red box. ;D
Onion casseroles are favorites around here, and so is carrot salad! We usually shredded the carrots, and the dressing is more of an oil/honey/vinegar. But "yes" to the dark raisins, and pecans! *swoon*
I grew up eating carrot raisin salad. My Mom put walnuts in sometimes or pineapple, the mayo or a little sour cream if we had no mayo. And, sometimes if we were having it with Easter Ham she would sprinkle just a little cinnamon. It was always a favorite summer salad and not expensive to make. You can use drained canned crushed pineapple if it is what you have on hand. Save the juice to add to iced drinks.

Carrot Raisin salad is one of my favorite salads. I make using a fine grinder for carrots and use crushed pineapple. We have it every time we have fried chicken.
Those onions are especially delicious alongside porkchops off the grill!
