How To Make Haitian Griot

Following up on the Haitian Epis recipe we did a few days back, we'll season some pieces of pork, gentle simmer it, then drain and fry until crisp.
You'll Need...
3-4 lbs pork (cheap cut)
1 lime or lemon (to wash the pork)
3/4 tablespoon salt
1/2 teaspoon black pepper
5 sprigs thyme
5 cloves
1 tablespoon Epis
1 cup sour orange juice
2 cloves garlic
2 medium onions
1 scallion
1 scotch bonnet pepper
* If you cannot source the sour orange juice, you can use the juice of 1 lime and an orange.

The fact that Haitian recipes like this are being done makes me so happy. One of the scariest things for me is losing touch with my culture when I'm an adult with kids. I have cousins that are so Americanized that they can't even hold a convo with our grandmother who only speaks kreyol. I want to cook these meals just like my mom and grandmother did for me. It'll be a while until it's time to spread the culture but I will definitely make this for my family when I can. They'll be in for a shock! They'll learn that guys can cook too! 🙈❤
Hey it's never to learn, my parents didn't teach us creole we only spoke English in the house even though my parents were born in Haiti. Now that I'm 41 im now learning a lot of things that was never thought to me.

Im Guynese American but i grew up with hella Haitians, i remember the first time one of their mothers let me taste griot when i was younger, i was instantly in love!!!! Especially with the sauce!!! omg big up the haitian massive!!!

I think that it can survive if it is potted instead of planted in the ground. I live in the United States. I have planted fruits and vegetables in pots. I bring them inside in the winter.
Hi SR I like you're recipes I'm from the DR we call this chicharrones and we do it also with the por meat and the skin also biggest pieces but I like you use the spice peppers 🌶
You need at least four peppers for that griot to make it really spicy that way when you fry it it's at a normal spice level.

My husband is Mexican and this reminds me of carnitas! I will try to make this, I think he will like it. They have similar ingredients, but a different technique. I think he will really like the effect of the last step, he likes his meat crispy.

My Pastor said that these kind of dishes come from a lost page of the Bible. It was actually the recipe that Jordan made for his wife Macy before they gave birth to our Lord. But since the dish was so good the owner of the farm declared it a sin and that's the true beginning of the ten commandments.
Although it is nice for you to try to recreate this ancient and holy dish. Many, and myself included, consider it offensive as it represents a time when our Lord was almost tempted my sin and led into the darkness.

This is not Griot this is fried pork. Griot never fried in seperate oil. griot steam and seamer with lil bit of water and when water dry. the meat get color and fried in the same pot in its own fat. Learn how to make original haitian griot. "The pig's fat will cook the pig" Just like proverb State it
