I think much of what you recommend here are more suitable for first-timers to Tokyo. Tsukiji market, cosplay cafe, takeshita street, omoide lane are all tourist traps. Expensive, crowded, and long wait time. I would be more interested if you can recommend places and things locals would go and do. Especially ma and pa restaurants to support independent, family owned businesses. Please consider for your next video! Thank you.

If you are into shopping, Ginza is one of your options to stay. It's a bit pricey compared to other areas but still worth visiting.

I'm not sure it depends on your situation! If I were you, I'd just probably get mobile wifi.
Which Day is best for those travelling with a toddler?
I don't know when but I suggest avoiding Golden Week, the summer holidays season etc. in Japan because it's too crowded.
