    CORN & CRAWFISH BISQUE
    2 lbs of Fresh Local Crawfish
    1 & 1/2 Tablespoon of Pi-YAHHHHH!! Seasoning
    2 onions
    1 Bell pepper
    2 Sticks of Celery
    2 Teaspoons of Minced Garlic
    1 Bunch of Green Onion
    2 Sticks of Salted Butter
    1/2 Cup of All Purpose Flour
    1 (32 oz) Container of Chicken Stock
    2 (10.5 oz) Cans of Cream of Mushroom Soup
    2 Quarts of Half & Half
    1 Teaspoon of Pepper
    1 Tablespoon of Worcestershire Sauce
    1 Tablespoon of Hot Sauce.
    2 (16 oz) Packs of Frozen Cream Style Corn
    1 12 oz Bag of Frozen Corn
    French Bread to serve with
    Start out by heating a large pot over a low heat.
    Season the crawfish with a Tablespoon of
    Pi-YAHHHHH!! Seasoning and set aside.
    (if crawfish or preseason from a crawfish boil, then season according to taste later.)
    Chop all of your vegetables.
    Melt the butter in the hot pot.
    Blend in the half cup of flour consistently stirring and gradually raising the heat to about a medium heat.
    When you see that the bubbles start to subside, drop the chopped vegetables in.
    Consistently stir for about 30 minutes.
    The idea is to get very soft vegetables and a peanut butter color roux.
    Once you have both a peanut butter color roux and very tender vegetables, stir in the chicken stock a little at time. Mix well
    Next add the two quarts of Half & Half and raise the heat to a Med/High heat.
    Add the Cream of mushroom, 1/2 Tablespoon
    Pi-YAHHHHH!! Seasoning, Pepper, Worcestershire Sauce, Hot Sauce, Green Onions, Cream Style Corn, and Frozen Corn.
    Mix well, let the heat rise until you see some slight bubbling, then lower heat, cover, and let simmer for 30 minutes to an hour.
    Once that time has passed, add your crawfish, and let simmer for another 20-30 minutes.
    Serve with some french bread or thick crackers and Enjoy! 😊
    *Add More Pi-YAHHHHH!! If needed*

    Since we're not a traditional family that cooks traditional Thanksgiving and Christmas meals, this one will go amazing as a "hold 'em over" until supper is ready. This year, we're doing a Cajun Ninja Thanksgiving supper where I pick my "can't live without this" recipes you've put out over the years and serve family, friends and those without an amazing supper. Of course we'll be playing Travis Mott, Wayne Toupes, Horace Trahan, and more zydeco magic for a very Cajun family get down. And we won't forget that peanut butter pie! Talk about WOW! SO GOOD!

    Made this for dinner tonight and my entire family loved it. It’s better than any of the local restaurants around here. I live here in Louisiana.
    Only thing I changed is that I had to use canned corn and I used shrimp instead of crawfish. Man it was good!!
    Adding this to my recipe book!

    Do you rinse the crawfish tails? Heated debate at my house.

      Great question and I’ve ALWAYS rinsed my crawfish tail meat before using BUT, I have read where people do not rinse because they want ALL the fat / flavor. Try both and taste the outcome! Millions have tried both ways, you can’t go wrong

      In addition to using leftover crawfish from a previous boil, try adding leftover corn from your last crawfish boil instead of canned or frozen corn. It’s DELICIOUS! Adjust seasoning accordingly.
