But masaru is like the personification of optimism haha Literally he fished out literal _garbage_ fish out of a sewage body of water, the whole time prepping them saying how bad they stink and how ugly they are, and even tried it twice before with bad results... yet... He is excited to still try again and excited even moreso to taste the nastiest and grossest fish imaginable (and not just this one, but many times), and no matter what he is still optimistic and pleases with even poor outcomes lol we can learn a lot from this man.

@@DongWang-m4n Sardines are actually quite good in many forms. Japanese eat them from fry to not as big as the canned ones. You should've went for CARP, large mouth bass or some other trashy tasting fish like those, LOL.

I have had a pleco for 20 years and counting in an aquarium. My Pookie has outlived all my other fish because he can breathe out of water. I got him when he was less then 2 inches. He is about 20 inches and bigger then the ones in this video. They are amazing catfish. You are quite the adventurer!!
They are sure hardy fish, aren't they? We had one that lived about that long too. For the last several years of his life, he was in a tank with a big, gorgeous Blood Parrot Cichlid. We eventually gave them to a close friend when we moved out of state and they lived with her family for many years as well.

When frying bottom feeding fish here in the US, we use fine cornmeal with some salt and pepper to season. Old Bay is a good addition as well. "You're too close" needs to be on a t-shirt!

Hello Masaru-san, greeting from Indonesia. Hey you should've tried making a fishcake out of it. We call that fish "ikan sapu-sapu" here in Indonesia, literally translated to "brooming fish" because of its cleaning nature. Some of us who live near clean rivers use them to make fishcakes called "otak-otak". It is minced, then mixed with flour, eggs, and seasonings, then wrapped in banana leaf, then steamed, and then grilled in fire. Pleco is basically tasteless you you will need a lot of seasonings to boost up its taste. Good video btw you looked so happy 🤣🤣🤣
Preparing Pleco like this, but then seasoning them with different flavors, like jerky flavors, and then drying them out, and turning them into jerky, seems like it could be a good way to make them more appetizing. Considering that they're so invasive, it would be a good way to combat them.
i would take their advice seeing as the dude in the video dont know what to do with the fish. i can tell its not the most efficient way to handle this fish bcoz it doesnt properly deodorise & he cooked the fish whole which unsurprisingly would also cook the innards🤧 also it seems that this fish need also of seasoning but honestly that sounds like untapped potential. i think masaru did the best he could and his video on the pleco is great research for other cooks out there🤙🏼
Here in Venezuela there is a fish called Busco, it is very similar, and the correct way to eat this fish is in soup, the more humid its meat is, the more flavor it will have.
I would love to see you try and cook Gar. I don't know if they're native to japan, but they're notorious here in the U.S. for being hard to catch and hard to eat.
Not a lot of people eat gar in the U.S. They are really a dinosaur! Alligator gar might be better to eat I would think, but they're very protected although I think in states where they are present you can take one.
In Trinidad we make a curried cascadura, which is our native armored catfish. The texture with the curry sauce is phenomenal. Thanks for sharing as always Masaru.
Note the scales are left In tact until ready to eat. Then they just fall away effortlessly. Worth redoing the dish and review. So much harder the way it's shown here

To bake, you just need to cut the fins and put it on the grill, to know the ideal point, just press the syrup, if it comes off the body or if it is soft it is because it is at the right point.

You can't really met them. You have to scrape / pry them off of whatever they're clinging to, and they like to wedge themselves into tight spots with their pectoral fins (which have the big bony spike that most catfish do). A net usually just skids right off of them. even in an aquarium, your best bet is catching them by hand (especially since their spikes and armor can totally shred the fine mesh most aquarium nets are made of)
Here in Malaysia the fish is invasive species also... So some of us catch it and cook it with Curry don't know how the taste was like because the fish to smelly 😂😂😂 buty friend said it was delicious
To dehydrate you add salt to the fish then leave it in a cool dry place, so the salt can pull out the moisture and the air can dry it. Wrapping it in clingfilm doesn’t allow air to come through
It's pretty cool to see these fish able live in Japan and a creek at that since they are known to live only in river and swampy places. In Vietnam, people grill and mix it with some ginger and lemongrass with a bit fish sauce things can taste good naturally.
In Indonesia we have the same fish, it lives on eating algae and trash particles in river. We call the fish 'Ikan sapu-sapu' lit. Sweep-sweep fish, or janitor fish. It is not normally for consuming but in the poorer areas usually locals makes uses of them for baits or subtitute fishball.

What you could do to dehydrate them more is take a container, pour a layer of salt on the bottom, place some pleco fillets on top of that, cover these in another layer of salt, and place the next set of pleco fillets on top of this layer, cover these once again in salt, and then place something heavy on top.

Our river cascudo is not a dirty fish, in fact it is a very interesting fish with good flavor, as long as you know how to prepare it. We have recipes for sauce (most common), and fried fillet. In the world of aquarism there are several ornamental variations. As for "tilapia", it's a fish that's been largely farmed, it's even used for sashimi, but it's not incredibly tasty, it's just... ok and easy to eat and prepare for its firm, odorless flesh. We dont eat it because they say it has a strong chemical which is not good for the body. There are times when this species outnumber the other types of fish so we also consider these as pests.

@@hotmeatloaf5697 Late to respond but plecos are bottom feeders so they suck up everything such as algae but they pick up a ton of dirt and debris. Either they had to poop out all the debris or the had to regurgitate all the debris.

Dear Masaru-san, Please hear me out! Am a fan from Malaysia. And Malaysia has a lot of river fish delicacies that are truly enjoyed a lot by the citizens. The most basic way to enjoy smelly river fish apart from removing a lot of water from the fish is we use turmeric to give flavor and get rid of the smell when frying them! It is as simple as just sprinkle them with turmeric powder alongside with potato starch and salt n pepper :D Please try it! I am sure u will enjoy it ^^
@@bzzvlog5879 exactly! That what I will mostly do too if I hv to deal with any smelly fishes. Works very well and it also give the fish a lot more flavor. I was trying to give the simplest solution to Masaru-san haha since he did all the hardwork already trying to get rid of all the moisture so I think for his style maybe I would suggest to just add one more stuff, the turmeric powder for him to not be anymore overwhelmed with 😅 But u're totally right! I think the tamarind especially gives out the best result to get rid of the river smell ^^

Exactly! I know Japanese cooking usually just relies on soy sauce and miso and those kids of seasonings but for a mud fish you almost NEED to use a spice powder like tumeric or even a cajun seasoning that catfish typically get dusted with. When he was doing the potato starch for frying I would have dropped in a few tablespoons of a seasoning powder like cayenne or cajun or tumeric. Its one fish you do not want just 1 or 2 ingredients or "want to taste the flavour of the fish". You need spices and seasonings!

The Okinawa aquarium is breathtaking. My favorite parts were the huge wall with whale sharks and the tunnel with the critters swimming above you.

My stepmom would deep fry them after removing the fins and entrails. So tasty and we would literally suck the meat out of the scales 😂

O nome aqui desse peixe é Bodó, a gente que mora no Amazonas faz um alimento muito, mas juito gostoso aqui, o chamado "piracui" é muito bom mesmo, so que precisa de varias horas e varios peixes desse. Alem diaso, eaae ficar feito so com agua e ingredientes ficar otimo.

You can't really met them. You have to scrape / pry them off of whatever they're clinging to, and they like to wedge themselves into tight spots with their pectoral fins (which have the big bony spike that most catfish do). A net usually just skids right off of them. even in an aquarium, your best bet is catching them by hand (especially since their spikes and armor can totally shred the fine mesh most aquarium nets are made of)
The net keeps them from swimming away, easier to grab by hand when they've been led into a corner.

To dehydrate you add salt to the fish then leave it in a cool dry place, so the salt can pull out the moisture and the air can dry it.
Wrapping it in clingfilm doesn’t allow air to come through

It's pretty cool to see these fish able live in Japan and a creek at that since they are known to live only in river and swampy places. In Vietnam, people grill and mix it with some ginger and lemongrass with a bit fish sauce things can taste good naturally.

In Indonesia we have the same fish, it lives on eating algae and trash particles in river. We call the fish 'Ikan sapu-sapu' lit. Sweep-sweep fish, or janitor fish. It is not normally for consuming but in the poorer areas usually locals makes uses of them for baits or subtitute fishball.

Yeah we don't have any like this near mine. Just guppies and crayfish. Seldom the latter lately which isn't a good sign :/
What you could do to dehydrate them more is take a container, pour a layer of salt on the bottom, place some pleco fillets on top of that, cover these in another layer of salt, and place the next set of pleco fillets on top of this layer, cover these once again in salt, and then place something heavy on top.

Here in Brazil this suckermouth catfish is called "cascudo" and is very common in rivers with rocks and even ponds where they are released. Our river cascudo is not a dirty fish, in fact it is a very interesting fish with good flavor, as long as you know how to prepare it. We have recipes for sauce (most common), and fried fillet. In the world of aquarism there are several ornamental variations.
As for "tilapia", it's a fish that's been largely farmed, it's even used for sashimi, but it's not incredibly tasty, it's just... ok and easy to eat and prepare for its firm, odorless flesh.

Here in Philippines we have a very similar species of that,but a little bit smaller. We call it Janitor Fish because they say it cleans the river. We dont eat it because they say it has a strong chemical which is not good for the body. There are times when this species outnumber the other types of fish so we also consider these as pests.
They actually infested the river of Marikina. Witnessing them thriving in a stinky river makes my stomach churn.

@@hotmeatloaf5697 Late to respond but plecos are bottom feeders so they suck up everything such as algae but they pick up a ton of dirt and debris. Either they had to poop out all the debris or the had to regurgitate all the debris.

In Indonesia we called them "sapu-sapu" as like a broom because they eat and clean your tank. We don't eat it at Jakarta we the water is poluted, but in area where the water is clean you can eat them and people make "siomay" or dumpling out of them

Please hear me out! Am a fan from Malaysia. And Malaysia has a lot of river fish delicacies that are truly enjoyed a lot by the citizens.
The most basic way to enjoy smelly river fish apart from removing a lot of water from the fish is we use turmeric to give flavor and get rid of the smell when frying them!
It is as simple as just sprinkle them with turmeric powder alongside with potato starch and salt n pepper :D Please try it! I am sure u will enjoy it ^^
malaysian use tamarind or lime juice to get rid of fishes smell.

I was trying to give the simplest solution to Masaru-san haha since he did all the hardwork already trying to get rid of all the moisture so I think for his style maybe I would suggest to just add one more stuff, the turmeric powder for him to not be anymore overwhelmed with 😅
But u're totally right! I think the tamarind especially gives out the best result to get rid of the river smell ^^

Exactly! I know Japanese cooking usually just relies on soy sauce and miso and those kids of seasonings but for a mud fish you almost NEED to use a spice powder like tumeric or even a cajun seasoning that catfish typically get dusted with. When he was doing the potato starch for frying I would have dropped in a few tablespoons of a seasoning powder like cayenne or cajun or tumeric. Its one fish you do not want just 1 or 2 ingredients or "want to taste the flavour of the fish". You need spices and seasonings!
