Furthermore, it is only in Darker Side that the Broodals only apparat for the last time. If you never go to Dark Side, you never really kill the Broodals
Gambling doesn't really stimulate the economy when you win every time with a perfect strategy. You're basically just stealing from the slots operators.
But you pay coins and win a moon. The moon isn’t a normal currency and is only valuable to someone like Mario who uses it as fuel. But Coins are universal.

There's no indication that Power Moons are anything more than sources of power. (Bonus note: Lumas are in an eternal cycle of rebirth. The Luma that transformed into the Comet Observatory was reborn, as were all the Lumas that gave their lives to stop the black hole, so using Galaxy Power Stars and turning hungry Lumas into galaxies and so forth is perfectly ethical.)
