There is also a change in lighting and coloration, which really brings more brightness to the show from the second season onward.

IIRC the first season was meant to simply be a recreation of the UK version, which is probably why michael was a lot less sympathetic and the whole atmosphere was duller. I wouldn't be surprised if the lighting change was intentional. They could've easily dimmed the lights down to match s1 if they wanted to.

I think the biggest change in Michael’s character is in his very last episode, where he schedules his going away party for the day after his departure. The old Michael Scott would’ve definitely wanted to make a bigger deal of him leaving Dunder Mifflin. In season 3 when he applied for the corporate job, he planned a big speech over some music as he exited the building. When he quits and starts his own paper company, he also makes a big speech as he’s kicked out by Charles Miner. But in his last episode in season 7, he instead focuses on giving back to his coworkers to give them each a proper goodbye. He realizes that he doesn’t need to have a grandiose moment for all his coworkers to see, and that each of the smaller moments and interactions he has with his coworkers have just as much, if not more meaning.

Michael Scott's character ultimately changes from season 1 because of the 40 year old virgin. With the success of the 40 year old virgin there was a pivot to mike more of Andy Stitzer's character. You can find more from the office's podcast.

Watch the Office again, thinking that both Michael and Dwight KNOW they are entertaining the audience and you will see the show through different eyes. I theorize that Michael is incredibly smart and an amazing salesman. Many of his actions are solely because he is on TV and he knows what he can get away with and keep his job. In fact, he is such a good salesman he knew that quitting had little impact on him because he could literally steal away a large percentage of the company's clients. He was smart enough to look sympathetic to the audience during the Jan breakup, he could see though Dwight and Andy, did practically no work but kept his job as boss because he was an amazing salesman, knew Jim and Pam were top employees, etc. He acted awful to entertain the cameras, because being a celebrity was where the money really was. At times he shows "self awareness" with Jim and Dwight, giving the audience a glimpse into the fact that he is manipulating the entire situation.
