    Ingredients:
    3kg (6.5lb) Plum/Roma tomatoes
    2-3 tablespoons Olive oil
    1 large onion
    3 garlic loves
    Salt to taste
    1-2 teaspoons Oregano (optional)
    7-8 Basil leaves
    2 tablespoons Lemon juice/vinegar (if canning use ¼ cup)
    Directions:
    1. Fill a large pot with water and bring to a boil. Meanwhile prepare an ice bath. Core out the stems from the tomatoes and slice a shallow "X" in the bottom of each tomato.
    2. Blanch the tomatoes in boiling water for 30-60 seconds, then transfer to ice bath. Remove the skin from the tomatoes.
    3. Chop the tomatoes into small chunks and set aside.
    4. In a large pot heat olive oil. Add chopped onion and sauté over low heat until golden, about 7-8 minutes. Add crushed garlic and sauté for 2 minutes more.
    5. Add chopped tomatoes to the pot, season with salt, oregano and basil. Bring the mixture to a boil, reduce the heat and simmer for 60-90 minutes, until reaches desired consistency (until almost all the liquid has evaporated and the tomatoes are reduced to a thick, jam-like consistency). Stir frequently. At the end add the vinegar, stir and turn the heat off.
    6. If you prefer smooth tomato sauce, puree the sauce using a hand blender. Transfer to a jar.
    Notes:
    • The best tomatoes for making homemade sauce: there are many types of tomatoes, I would recommend making homemade tomato sauce with Roma tomatoes, Plum tomatoes, San Marzano or a combination of serval kinds. It is important to use ripe tomatoes.
    • Onion, garlic, basil and oregano are just optional additions. You can omit them all or use some of them.
    • Canning: Pour into sterilized canning jars and twist on sterilized lids until very secure. Place jars in a pot of boiling water for 30 minutes. Let cool completely on the counter. Make sure that the lids have sealed completely. If the lid pops up when pressed, the canning process did not work properly. Store in your pantry for up to one year!
    • How to store tomato sauce in the fridge: transfer the sauce to a sterilized jar and keep in the fridge up to 2 weeks
    • How to store tomato sauce in the freezer: let the sauce cool completely, transfer to a jar/can or container and freeze up to 2-3 months.

    Have just made your sauce, seems to have turned out fine. I like that there was no sugar in recipe. All my old recipe books for tomato sauce said cup of sugar. Thank you.

    I love to add - while seasoning- a teaspoon of molasses to my homemade tomato sause; it balances the acid of the tomatoes, rich my sauce, enhance the colour of the sauce by making it dark red, and give my sauce a wonderful sweet aftertaste.

      Agree. Sauce needs something sweet, teaspoon of sugar will do. Many people put carrots in tomato sauce because they're sweet and add bulk.

    I ended up doing this without onions and used onion powder. But decided to add 1 medium sized Hungarian wax pepper and 1 green cayenne pepper from my garden, both sliced very thin. It added just the right amount of heat to my sauce and came out wonderful

    We have over 30 tomato plants growing in our vegetable garden each year. We give tomatoes to friends/family/neighbors and also make tomato soup to freeze/can and have on hand until the next harvest season. I had never really found a good sauce recipe until now.     Wow. I just watched this once, figured if memorized it and it seemed simple enough. I even had that handheld blender thing! I decided to make the tomato sauce and whip up spaghetti with what I had lying around and boy. The sauce came out great!! Thanks!

    Red wine, basil pesto, garlic, parsley, oregano. That’s what I add to mine to give it a nice flavor with a rich taste. Good over fetachinni or spagetti

    Tomatoes coming in. Had delicious BLT’s+ but had to do something else. Made this sauce today for pizza and spaghetti. Turned out great for first try! Used onion powder (husband prefers), basil, T of sugar, and salt. 👍

    I do mine completely different... I have never used ice. I just scoop out the center with a spoon and lay the inners face down. When they soften up a little then I place a top on the pot and add oil. After hit it with flavor. Cream is awesome. Especially DRY cream. It thickens up differently. A little bit of a cornstarch slurry and white wine. Done . 😊

    0:05 SALSA DE TOMATE CASERA
    Ingredientes:
    3 kg (6,5 lb) de tomates pera/roma
    2-3 cucharadas de aceite de oliva
    1 cebolla grande
    3 dientes de ajo
    Sal al gusto
    1-2 cucharaditas de orégano (opcional)
    7-8 hojas de albahaca
    2 cucharadas de jugo de limón/vinagre (si está enlatado, use ¼ de taza)
    Direcciones:
    0:22 1. Llene una olla grande con agua y haga que hierva. Mientras tanto prepare un baño de hielo. Quite los tallos de los tomates y corte una "X" poco profunda en el fondo de cada tomate.
    0:36 2. Suavice los tomates en agua hirviendo durante 30-60 segundos, luego transfiéralos a un recipiente con agua helada. Retire la piel de los tomates.
    1:11 3. Pique los tomates en trozos pequeños y reserve.
    1:27 4. En una olla grande caliente el aceite de oliva. Agregue la cebolla picada y saltee a fuego lento hasta que esté dorada, unos 7-8 minutos. Agregue el ajo picado y saltee por 2 minutos más.
    2:00 5. Agregue los tomates picados a la olla, sazone con sal, orégano y albahaca.     I'm doing this right now! Just that I blend it all in a blender instead of cooking everything together because I want it to be smooth. I also added one carrot and one small onion instead of a regular sized one xoxo

    I fry off some fresh chilli, cumin seeds, crushed garlic and half as much crushed ginger with the onions and maybe a couple of cloves. Gotta add some sweetness, that's a must...sugar, orange juice instead of vinegar, grated carrots is good.

    I feel like you don’t have to do that extra work into boiling them and cutting them like them, you can just cut them up into pieces and start cooking them with the onions and garlic.

    Did this with cherry tomatoes didnt blanch them tho just sautéed them up with some garlic got it to a boil reduced heat let it reduce (steam off) to thicken

      @@fatsnorkel A couple of other options for you to look into would be to make a fermented tomato sauce. Another option is to vacuum seal the jar. There are a couple of different ways to vacuum seal Mason jars. Keep in mind that if it's vacuum sealed but not fermented, it will last for at least 5 days in the fridge. Beyond that, you'll have to decide if it's still good or not...

    Some improvements: Prepare tomatoes as shown. Instead of just onions, sautee a sofrito (onions, carrots and celery, diced). Then add the tomatoes and cook down. At the end, add the minced garlic as adding them with the onions or sofrito will mute the flavor (onion and garlic will cancel each other out). Brown minced veal, pork and beef with salt/pepper, add sauce and let cook for 4 hours. Don't let it stick!

    interesting meathod most other meathods i have seen use a food mill to get the seeds and skin out but you just blend yours up after its cooked. I don't know which is better decisions decisions lol great video btw

      I had the same question. I would use a potatoes masher.

    Love this recipe but am I correct in saying that the health benefits of the onions and garlic will be lost cooking this long?

      You can add it in new garlic and onion when you use the sauce

    I think it’s missing tomato paste and you can make your own to give it that extra richer depth to it with a little sweetness
