So you mixed it and as we can see the portion gets smaller so... does it mean that there is proportionally more food dyer cause the frosting get compressed and less fluffy?

Yeah, no I see how that’s confusing and that’s my fault with how I filmed this. So what I did was add the gel color to the buttercream then mixed it. Then I took out half to save for the beginning shot where you see both the before and after for all the colors. Then I took the immersion blender and started blending the second half.
So there’s a slight decrease in volume, because the immersion blender does knock out some air, but not as drastic as you see in the bowl.

@@koteghe7600 In theory there is less air in frosting so we got proportionally more food colouring comparing to cream volume

The heat is true! I’ve heard a trick is to microwave a small portion of your frosting, add the dye to it, and then mix it all into the rest of the frosting and let it cool so it’s the right texture. I’ve tried and it does make the color more vivid but I think an immersion blender would work better at keeping textures true to type!
I used to do this when i worked st a bakery. Or, if i was able to plan my colors, I'd let the icing sit with the color and remix the next day.
I’ve heard of the microwave it then let it sit and re-whip later or the next day once it had cooled. I had wondered about this trick vs that one. The heat part of the immersion blender makes sense now. 😊

I do that trick too but sometimes it can change the bc texture if I heat it too many time by trying to deepen the colour

This is insane to me. I don’t bake. I know very little about cooking and even less about baking. Just never enjoyed it like I do cooking. But it’s crazy that you can get such drastic results from one little action. Truly blew my mind 😅

Heartbreak from frosting could be true. If you're trying to make a special cake for someone but are struggling to get bright colours, this video can help with that.
Meringue frostings will always be more pastel and need more dye because the air bubbles beat into them, so the way I’ve been getting the color to work is: take a spoonful of the finished frosting, add your dye and microwave it and mix, then mix that warm mixture back into your frosting and it will spread through the entire frosting simply because the color covers more surface area. Plus I don’t have an emulsion blender 😋

This is the same principle we use for making oil paint! It isn’t good enough to just mix pigment and vehicle, you also have to mull it for a while. You want pigment particles with the highest possible surface area - volume ratio, otherwise a ton of pigment is hidden INSIDE the particle and not being seen.
This is also why when you mix two paint colors together, you loose a bit of saturation. If you mixed those two colors and then mulled them, it would get that saturation back!
Wish I knew that when I made my kids birthday cake. I have to use natural food color because he has allergies, and they already come out so much lighter than gel color would

Have you tried microwaving a small amount then remixing it in? Generally that's the easiest way to intensify colours, youtube it, you'll find lots of videos showing it.

Since most people probably don't have an immersion blender, you can also just use a microwave. Separate a small bit of meringue, add the gel coloring and mix it, then microwave it. It'll melt, but the color will be bolder and once you add it back to the rest of the meringue, you can whip it back up again
I'm guessing it only works best on meringue type icings? What about American buttercream?

Okay so this is super interesting and very very informative and good advice but
Pro tip: if you want your buttercream to be super light and fluffy, this is not the ideal method. By blitzing it at a high speed and temp you’re melting the butter a tiny bit but also destroy all of those little air pockets you’ve created by whipped the buttercream.
While this method is fantastic for silky smooth and brightly coloured icing, if you still want light and fully I would recommend using powdered pigment for colouring. As is stated in the short gel food colouring is water based and attempted to mix with a fat won’t work as well, however if you use powdered food colouring pigment (harder to find but defs worth it) you should still get some strong colouring and keep that light and fluffy texture!

Immersion blender is pretty worth it especially if you like creamy soup. This is cool even though I will never use it.
What I like is that it’s the same thing but with more color options because the softer more “pastel” colors can also be used just like that for a different look. One tool gives a whole separate palet and that’s really cool to me
This also works by slightly microwaving, or heating whatever you need coloured! And then if needed, freeze/put it in the fridge again, and you get the same result if you don't have an immersion blender

Hi. I am from Europe, where every household hold has a scale and an immersion blender (but most of us don't have standing mixer). It is much easier to blend in a narrow high container. Usually immersion blenders are sold with such a cup since it is the easiest way to make mayonnaise. An investment in such a narrow cup could come in very handy for your small scaled frostings 🙂
Why would you say it like this? Scales and immersion blenders are common in many other places too. I swear Europeans think they're all geniuses when you're all just smug and ignorant.

American kitchen equipment is different to what I am familiar with.
Most people don't have measuring cups in Europe. All the grandma recipes are in grams. Measuring cups is something you only find in shops these last years because of Pinterest, RUclips and American recipes.
I know most Americans have standing blenders. Here it is uncommon.

One thing about gel food coloring is it is made for coloring things that are fat based versus liquid food coloring. Early in my career I once made the mistake of trying to color royal icing (which is made with egg whites and no fat in it) with gel food coloring. But because royal icing has no fat in it, it did NOT jive. The gel coloring made the royal icing start to loosen and become fluid even. I Was trying to pipe Xmas trees and had to remake the royal icing from the beginning. Lesson learned lol

Just be sure to double the amount of icing as with the air removed you come up with a much denser frosting.
