How to make rustic bread & carrot soup 🥕

  • In this video, I’ll show you a recipe on how to make homemade rustic bread and an easy creamy vegan carrot soup. Making bread can be time-consuming, however, the final product is well worth it. Rustic bread can be stored in the fridge for over a week and stored in the freezer for up to a month.

    Homemade rustic bread
    Ingredients
    3 ¼ cups bread flour or all-purpose flour
    1 tablespoon dry active yeast + 1 tablespoon sugar + 1 cup warm water
    **to get the best warm water temperature, I mixed ¼ cup hot water with ¾ cup room temperature water
    Dry herbs and spices of choice: (1 tablespoon rosemary, 1 tablespoon oregano, 1 tablespoon garlic powder, 1 tablespoon ground coriander)
    2 teaspoons salt
    Lots of black or white pepper
    3 tablespoons olive oil
    Directions
    o Add dry yeast with sugar and warm water. Give it a quick stir to mix everything together.
    o Set yeast aside for 6-10 min until it becomes frothy.
    o Once yeast is frothy, add it into a big bowl along with olive oil, spices, salt, and flour.
    o Knead to form a dough. Add more flour if dough is too sticky.
    o Drizzle some olive oil on dough and cover with damp cloth and let dough rise for an hour.
    o Once dough has risen, press gently on the dough to deflate it.
    o Shape dough into circular shape and lay them out on a baking tray.
    o Put a large bowl over the dough so it will keep a nice dome shape when it rises the second time.
    o Let dough rise second time (30-40 minutes).
    ** Spray some water into oven and on top of bread before baking. This will create steam and prevents the crust from burning too fast.
    o I bake mine in electric oven at 150°C for 40 min.

    Creamy Carrot Soup 🥕🥕🥕
    Ingredients
    3-4 large carrots
    1 large potato
    4 cloves garlic, minced
    1 onion, diced
    1 tablespoon thyme
    1 tablespoon coriander
    2 teaspoons salt
    pepper to taste
    Olive oil or butter
    6 cups water
    Directions
    o Sauté garlic and onion in olive oil.
    o Add your spices and salt.
    o Add chopped carrots and potato.
    o Stir to mix everything and add water.
    o Cover lid, bring to a boil, and simmer until carrots are soft.
    o Let soup cool down a little and blend until smooth.
