I own a middle eastern restaurant in Mississauga, Ontario (CANADA) and we make these about 10 times a day. I would love to send you the moulding tools that we use to make them and some tips for when you make them next!
Great stuff, Barry! The falafel balls look really good. I'm from Israel and falafel is basically our national food (although it is originally Egyptian or Tunisian, IIRC). Few tips to improve the dish: Make the balls a bit smaller. You will have an easier time to get the middle cooked through, and a much easier time shoving them down your pita. Tahini with yoghurt is borrowed from Greek cuisine, and we usually only put tahini and a sauce called amba, which is made from mango (Google it). Some also put hummus, althought it is also made from chickpeas. Chop your vegetables into much smaller pieces. The whole point of falafel (and shwarma) dishes is that all of the ingredients are contained within the confines of the pita, so you can eat it standing up or on the go. Chop everything, make the balls smaller in diameter and shove it all inside the pita. Pour tahini and amba (and if you're brave some Yemeni hot sauce called Zhug, and you're good to go. Bon apetit! I know you wrote this a long time ago but what spices would you recommend putting in them? I'm making some today along with some homemade flatbreads and hummus, tzatziki ect and I really want them to be nice and taste at least similar to the takeaway ones.

But the falafel mash should include chickpeas obviously, parsley, coriander, onions and hot peppers if you want it hot, and seasoned with salt, just a little bit of black pepper, a little garlic powder and cumin. Taste the mash before frying for salt and spices. Then fry ONE ball, let it cool a little and taste it, fix your seasoning if needed and then proceed.
Yogurt is not a must at all. In the middle east you just put the tahini or mix the tahini with some water, garlic, a bit of lemon juice and a bit of salt

A ex girlfriend got me into making Falafel, Hommus and Tabouli back in the 80's. We used a little vegetarian cookbook (which I still have) by an Australian cooking legend who just recently passed Margaret Fulton. And you are so right homemade and fresh tastes nothing like the bought stuff. Keep up with this series I'm enjoying it.
If you add silantro to that green paste you can make sofrito which is a Spanish seasoning and smells great when you add it to oil right before adding in the meats great for dinner
If you don't want to deep fry you can form the falafel into flat patties and pan fry them in a shallow pan using far less oil, also they fit into the pita bread way better in the patty shape. I love falafel I make them about once a month and I always make them into patties instead so I don't have to mess with deep frying.

You said it right the first time. Chickpea falafel are served in Isreal, Lebanon, and other Middle Eastern countries. Fava bean falafel is Egyptian. Both are tasty. Everyone puts different things in the pita with their falafel, I like tahini or youghurt or tzadziki, and chopped cucumbers, cabbage, (or romain lettuce) and tomato.
I've always wanted to try making Falafel myself! Gotta try this recipe! And I feel like there should be some lemon juice or lemon zest in it to brighten up the chickpea flavour...

One tip for wrapping up falafels and such: Split the pita entirely and then use both parts as a double layer for wrapping like a burrito. The Lebanese restaurant I worked did it for all their wraps and it works beautifully. Way cleaner eating it as well.

I'm from Israel, even though Falafel has roots in other Mediterranean kitchens, we pride ourselves with Falafel as our national food :) The reason you should use soaked chickpeas and not canned ones is indeed related to the dryness of the mixture, you wouldn't normally need to add flour to our mixture, and you'd get a "cleaner" Falafel ;) also you've gone pretty big with the size XD but I'm sure it was delicious! You should really try it with a proper pita though, your pita was looking a bit sad :( making pita at home is also something you could try! :D I've done it once or twice in my life, it's pretty fun.
Instead of bread you could also use a wooden spoon or anything made of wood, to check the temperature of oil. If you see tiny bubbles forming on it, it's ready

The street venders use them to form the balls and drop them straight into the oil. They make them so fast it is a blur!
Barry, good on you using a multi-purpose tool! A pasta server does so well for frying things, as well as boiling eggs. I've never had falafel. It looks so much like hush puppies! Edit: Also, here's a tip for pancakes: It's tough making little enough batter for one breakfast (most recipes start with an entire cup of flour -- yeah, I'm 'Murrcan). So what I sometimes do is pour them small enough, and don't fully brown them, then wrap and freeze them in pairs to have toaster pancakes later in the week!

You could make "Bara Brith", a loaf cake made with tea and dried fruit, "Welsh Cakes" which are little dry cakes with raisins or currants in them and topped with sugar, "Cawl" which (even though it mainly refers to any kind of soup or broth) is a traditional welsh soup. Hey, if all else fails, chuck some cheese on top of some toast and call it a Welsh Rarebit! Haha! Plus think of all the Tom Jones impressions you'd get to do! Much love from Wales

You should try making mofongo, it’s a Dominican/Puerto Rican dish made with fried pork skin and mashed fried plantains. Not sure how easy it would be to find plantains in the UK tho

You really aren't *supposed* to use flour in Falafel, but most places do. People often use too much Onion and Garlic which makes it super wet. Although, you can totally still fry them even if the mixture is a bit wet. The heat will fluff them up from the inside.

Barry - you need to do a knife skills video with a professional chef! Finger tips always pointing away from the blade (curls your fingers under your knuckles and use the knuckle flats to guide the cheek of the knife). And you would normally pivot the knife on the cutting board moving the handle down and forward for each slice. That way, you can cut as fast as you like with a lot of control and never lose a fingertip!
