They look great Barry, but normally in Brazil nobody uses cocoa powder, they use instant chocolate milk powder (similar to Nesquik) which makes them *much* sweeter! Honestly, I prefer them with cocoa, I don't want them so sweet, but that's kinda sacrilegious to Brazilians!

The IPA can be a bit confusing if you're not used to it, that's why the IPA representation links to an explanation of how to interpret it, including examples in English for every sound. But as we know, Barry never reads the effing manual and we love him for it.

Hey, Barry! Glad to see you're doing brigadeiros! I'm a Brazilian and a fan of your channel! I haven't conquered any elections with it, but all my foreign friends love it! I can give you some advice to make it better... No need for salt, let's start with that. First melt the butter (unsalted butter) into the condensed milk, low heat, stirring constantly. Then turn it off, add and mix well the cocoa powder (a whisk may help to get rid of any lumps). Bring it back to the low fire and stir constantly, basically until it changes from liquid to creamy, being able to see the bottom of the pan as you move the spoon or spatula. Don't let it boil, it will possibly spoil it. Don't put it in the fridge at all, just let it cool down to room temperature. Eventually, you can try new recipes (gourmet brigadeiros are a thing in Brazil at the moment!). Cheers!

The city I used to live in, in the US, had a Brazilian buffet restaurant that sold brigadeiros at the counter where you pay for your meal. I literally still crave them so much because they are amazing!

And you can make them in many different flavours, the most popular here are: coconut, Nutella, powdered milk and cashew nut. You just change the cocoa powder for one of those ingredients. Also, we eat them straight from the pan, with a spoon, watching a movie ☺️

I just made a condensed milk icebox cake on the weekend and it was so perfect for summer! It's called Carlotta de Limon and it's from Mexico and other Latin countries. I saw it on Emmy in Japan this past week. Make sure you use regular evaporated milk and not skim or 2%, because online many ppl report that it didn't work for them, but mine worked great and my BBQ guests loved the lime curd treat!!
Brazilian here Brigadeiro is very versatile. You can put other things and it'll turn out amazing. I usually make it with cinnamon and coffee, but peanuts taste good too. You can also melt a white chocolate bar into the condensed milk and make white brigadeiro. Also, we use the more liquid form, when it just starts to thicken, as a cake filling or cake icing. Personally, I really enjoy to let a few burnt bits, they get elastic and get stuck to your teeth. We also put coconut instead of cocoa powder and make "beijinho" and strawberry jello powder/strawberry juice powder and make "bicho de pé". If you put powdered milk you can also make another kind of these truffles. All of these you can find in birthday parties here in Brazil (at least here in Rio, where I'm from). We love condensed milk, as you can probably tell...
With condensed milk like that, I've always been told to use the puncture type can openers and put two holes in the top across from each other so you can just pour it and not completely remove the lid. I'm not sure if those are a thing in the UK or not though.

HELL YEAH you did a brazilian recipe! We also do all sorts of versions of this sweet, with nuts, coconut and other stuff in the batter. I'm used to eating around 20 of those on children's parties. they are amaaaazing with some instant coffee! I use about a table spoon when I add it in I think. Just add it with the cocoa powder, same for orange essence or maybe cinnamon.
When you melt sugar of any kind you can usea double boiler. Use a heavy bottom pan. The second you are done with the pan fill it with hot water and dish soap. Wash the pan right away or soon as you can, it will clean up fairly easy.
Hey Barry. Please try making something from Malaysia! Like nasi lemak dan ayam dish (consists of coconut rice, fried chicken, egg, anchovies, nuts, and sauce). Or satay (skewers with peanut sauce) .
You should try the “Baked Alaska” or “Omelette Norwegienne”. It is a cake sponge with ice cream and then meringue around or on top. It is baked in the oven for a few minutes (yes, ice cream in the oven), or just use a blow torch to finish the meringue.
I visited Peru a while ago and tried these things called Boliyucas, they were served with this amazing cheesy dipping sauce, you should totally try them out! (Basically just fried balls of yuca filled with cheese, what's not to love?!)
a suggestion in opening a can of condensed milk, pierce a hole on one edge of the can at the top and another wider hole on the opposite end at the top. so basically there should be a small hole and another wider hole on the top of the tin can opposite each other. u can pour the milk from the wider hole side and the air can escape through the other hole, when its empty u can open it up completely and use a spoon to get the rest!
It’s pronounced Brie (like the cheese) gah day roh, and you don’t actually need to cook it for that long, use medium heat, anywhere from 5 to 10 minutes is normal, and to make it even better i like to use a good amount of bitter sweet chocolate, melt it and put about 2 spoons of cocoa powder, and after it’s done, turn off the heat and add a little cream so it’s creamier and not too sweet. The chocolate it’s not in the original recipe but makes the brigadeiro so much richer in flavor and texture. But since the cream makes it a little liquid you have to wait for it to cool down

Brazilian living in England here 😃. We never use salt in our brigadeiros but yours look delicious! If you use too much cocoa powder they would be taste too rich so maybe less cocoa would do the trick 😉. I never measure my ingredients by the way (hard to find a brazilian who does 😂). I'd request that you try Fiocchi di neve or (snowflakes) They are the most amazing wee cakes from Napoli, Italy, created by the pasticcerie Poppella's. The traditional flavour is filled with a sweetened ricotta cream, you also got chocolate filled ones and pistacchio crema (sweetened pistachio paste - sort of like a pistachio peanut butter but just with pistachios), all inside a mini brioche enriched dough ball. I guess they are kind of like a Southern Italian take on a profiterole. AMAZING.
I used to work at a Brazilian restaurant, and would help the owner's wife make brigadeiros. Very time consuming. You can replace the cocoa powder with other things. We used cocoa powder as well as crushed walnuts, strawberry jam, shredded coconut, passion fruit, or a combination of those things. I learned that they're easier to roll if you don't have warm hands 😜

When my Brazilian friends taught me how to make this in college they said to use Nesquik instead of cocoa powder.

I remember making these in primary school. About 30 years ago. We also made white chocolate ones. Give the white ones a try!
We used to have these in Angola as the Brazilian mums used to make them. We used to eat them until we felt sick. :P

It's also a very common thing done by girls to eat when they're on their periods. My gf always makes a pan of brigadeiro and eats with a spoon, while still warm!

they are amaaaazing with some instant coffee! I use about a table spoon when I add it in I think. Just add it with the cocoa powder, same for orange essence or maybe cinnamon.
Roll them in espresso powder with the lightest touch of cayenne. That's the stuff.
I would say you made them perfectly.

When you melt sugar of any kind you can usea double boiler. Use a heavy bottom pan.
The second you are done with the pan fill it with hot water and dish soap. Wash the pan right away or soon as you can, it will clean up fairly easy.
Hey Barry. Please try making something from Malaysia! Like nasi lemak dan ayam dish (consists of coconut rice, fried chicken, egg, anchovies, nuts, and sauce). Or satay (skewers with peanut sauce) .
A tiny pinch of salt in hot chocolate is amazing, too.

You should try the “Baked Alaska” or “Omelette Norwegienne”. It is a cake sponge with ice cream and then meringue around or on top. It is baked in the oven for a few minutes (yes, ice cream in the oven), or just use a blow torch to finish the meringue.
I visited Peru a while ago and tried these things called Boliyucas, they were served with this amazing cheesy dipping sauce, you should totally try them out! (Basically just fried balls of yuca filled with cheese, what's not to love?!)
a suggestion in opening a can of condensed milk, pierce a hole on one edge of the can at the top and another wider hole on the opposite end at the top. so basically there should be a small hole and another wider hole on the top of the tin can opposite each other. u can pour the milk from the wider hole side and the air can escape through the other hole, when its empty u can open it up completely and use a spoon to get the rest!

It’s pronounced Brie (like the cheese) gah day roh, and you don’t actually need to cook it for that long, use medium heat, anywhere from 5 to 10 minutes is normal, and to make it even better i like to use a good amount of bitter sweet chocolate, melt it and put about 2 spoons of cocoa powder, and after it’s done, turn off the heat and add a little cream so it’s creamier and not too sweet. The chocolate it’s not in the original recipe but makes the brigadeiro so much richer in flavor and texture. But since the cream makes it a little liquid you have to wait for it to cool down

I am from Ohio in the USA. We had a quite popular dessert from our state called buckeyes. They are peanut butter balls dipped in chocolate. One of the best desserts you'll ever taste!😋 it's a must try!

Brazilian living in England here 😃. We never use salt in our brigadeiros but yours look delicious! If you use too much cocoa powder they would be taste too rich so maybe less cocoa would do the trick 😉. I never measure my ingredients by the way (hard to find a brazilian who does 😂). Some people in Brazil make gourmet brigadeiros and the flavours you can add to it are endless😍! Thanks for showing the world a bit more of our food and culture 🤓

I'd request that you try Fiocchi di neve or (snowflakes) They are the most amazing wee cakes from Napoli, Italy, created by the pasticcerie Poppella's. The traditional flavour is filled with a sweetened ricotta cream, you also got chocolate filled ones and pistacchio crema (sweetened pistachio paste - sort of like a pistachio peanut butter but just with pistachios), all inside a mini brioche enriched dough ball. I guess they are kind of like a Southern Italian take on a profiterole. AMAZING.
I used to work at a Brazilian restaurant, and would help the owner's wife make brigadeiros. Very time consuming. You can replace the cocoa powder with other things. We used cocoa powder as well as crushed walnuts, strawberry jam, shredded coconut, passion fruit, or a combination of those things. I learned that they're easier to roll if you don't have warm hands 😜

OMG I saw this sweet in another video and was "Babe, Barry made some brigadeiros!" and was laughing because I thought it was some look alike sweet... but no... you actually did it! Try with some powdered milk instead of cocoa powder... it is delicious.
