Many mid to senior positions, especially those at small studios, might just be doing really basic grunt work. They sometimes hire these more experienced artists because from time-to-time the studio might need to produce work that are at a higher level, which a junior artist doesn't have the experience/technical knowledge to execute. A senior can fulfill the function of a junior, but not there other way around.
I don't work in production anymore since 2017. I now focus on the D2 Conference, and have a design strategy business. I work together with archviz offices on strategic planning, client acquisition and branding. The last position I had in a Viz office was as project manager. I also teach at the university social media and communication for designers.
