Yes, the blades can be flipped over easily. The left/right handedness (if that is a word) is more with the design of the plastic handle. The groves on either side of the blade (where the arrow would lay) are different angles. The arrow will lay flatter for right hand use, and the angle would be sharper if you flip the blade and use with left hand. They should have made the grip symmetrical. That being said, I think flipping the blade would probably be just fine, you just may not be able to hold the handle at a flatter angle.
Not sure what the advantage is with this compared to a razor blade? Just use a dull one and save 15.00 buck for more fletching or what ever beer for that matter.

If you take the wrap off first the vanes will come off with it
