Not a problem, you need to have both consistencies perfeclty accurate in white and red, which is quite difficult when working 100 miles per hour ahahahhaha... but it is possible. I hope this tip helps!.
oh wow... I didn't know you could add water to isomalt... I've only just melted the isomalt but I bet the water would make it less hard and easier to eat! Thank you
chickapey you just add water when the isomalt it's on it's pure stage like the video shows, otherwise you just melt it. Let's say I made the hard isomalt and break it into pieces then I can just microwave it for later use. I hope this helps!
Mm one question, it gets sticky at any point? i mean, I work with the same Isomalt , but after a few minutes it gets sticky , i didn't use water though, maybe that's the differences? Thanks, great video :)

LAGACÉ JOHANNE light and dark are notorious for bleeding, but I dry my cookies in front of a fan and it has eliminated that problem.

Gotitas de Azúcar that's odd. the isomalt I use never gets sticky but I hadn't used water. I've done sugar but it got soft and sticky.

It is better to do it as I show on the video, that way you can control the temperature and not burn it.

what kind paper you use at the bottom when you pour the isomalte into the cookies?
In the video I mention parchment paper, but you can also use a silicone mat or wax paper.
