    Years ago I waitressed in a pub & one of their weekly specials was skirt steak. I had a customer who said he loved skirt steak on fajitas or tacos but he found whole skirt steaks tough. I told him to order it and I would show him the "secret" to a tender skirt. When it came to the table I asked him how he was going to cut it- of course because of the length he went to cut it with the grain. I stopped him and showed him how to cut it. He enjoyed his dinner and raved about it to his wife and I scored one of the best tips I ever got! They became loyal regulars on skirt steak night.

      I think the best bet is a butcher shop. Do you live anywhere near Otter Coop? I did find it there once!

    I always make fajitas out of skirt steak. And yes, they must be cut AGAINST the grain to be tender. Cook them hard, hot and fast and they do not need to be pounded. Its super beefy in flavor and super satisfying. I always eat the entire steak. Left overs are not that great to me. It used to be really cheap but not any more. I'd cook it 4.5 to 5 minutes TOPS!!! Overcooked is shoe leather.

    I adore skirt steak. Hubby prefers steak on-the-bone. I have been trying new cuts to me, like sirloin tips. Never bought it or tried it before yesterday. Very good.

    PLUS! I had a strip steak to cook today & after cooking it, I could see those lines You JUST taught me about; I did what You showed in this video.
    I think it saved the day!! I was able to eat the meat that without cutting it like that - I would have hated it!!

    I’m making a skirt steak tonight for fajita bowls. It has been marinating in Barbacoa marinade for several days now and because it’s the warmest day of the Spring season so far I wanted to cook it in my air fryer. Thank you for the video! New subscription added 😊

    Hi Anita!! Skirt steaks are almost impossible to find here in Michigan as well. I came upon them at a very small grocery store known for his meats, ONCE!!!! That's it! I wish I could find them again! The Bearded Butchers have a video in which they talk about them, they are on the underside of the ribs of the cow, (there is not a lot of it per cow) and it used to be they'd grind it up into ground beef or toss it! Now they do save and sell it as skirt steak! Pretty cool I thought! Yes, I wish more stores would carry them! It was tasty!!!!!
    I have LOUSY LUCK cooking steak in my 2 air fryers, one died and one I still have. I just cannot seem to get meats to come out nice and juicy as compared to my cast iron. I much prefer my cast iron over the air fryer for overall taste. Maybe it's because I don't have a Ninja, I'm serious there! The most I use my air fryer for is like a toaster oven. Sad, but true. I make shaved beef into chips and also do fry up chicken skins which there are never enough of those! Lol!!!! I'll intentionally buy chicken thighs IF on sale just for the skin! Lol! Yes, eventually we'll eat the meat, most often using Nili's breading she's come up with the recipe for, but in lard on the stove in my cast iron pan, again!!! Lolol!!!
    LOVED this video! I'm happy you brought attention to the Skirt Steak!!! Maybe MORE stores will carry it!!! We can hope!

      Thanks for explaining what part of the cow as I was wondering! And that does explain why we don't see a lot of skirt steaks! Nothing wrong with cast iron pan cooking!

      Yes, same idea with flank steak but they are thicker so take that into account with your timing.

    When I see the old rooster timer, I feel like that is for me too. 😍
    So happy to see Dad's favorite apron & pray this is a sign that all the old aprons are coming back.
    I have missed them.
    You sure know Your beef Grrrl!! I am just learning as I have never eaten beef other than an occasional filet mignon.
    I thought it was all dry & tough except that so... Plus it always set too heavy, too long in my tummy.
    Now I am learning & keeping things rare & eating fatty cuts & I am Loving beef!!

    love the Skirt steak and an air fryer makes it so quick and easy! was thinking of getting the ‘best’ Breville air fryer?
    might try a similar steak called a Hanger steak aka Butcher’s steak (as in what the butcher keeps for himself… only one per cow)

      @@KetogenicWoman not common as there is only one per cow and it’s not very big, similar texture to Skirt steak but does little work so is more tender and more flavorful - WholeFoods has two a week…. I bet your butcher would save you one!

    Anita, have you noticed a difference in how your meat cooks w/the newer XL Ninja grate/pan sitting up higher, closer to the cooking element? I have the same as your old one, the Ninja Foodi Grill, (which needs replacing) & while I might miss the 510 degree high temp for cooking steak, I think the trade off of having the meat closer to that heat may be worth it. Thanks in advance for any info you might share.✨Samantha in AZ

      I still have not used the grate but I feel that my steaks that I air fry do seem to cook a little faster than in the old one. I feel like I am still learning the best times with this one!

      I like it as much as my old one but the only thing that is better is that the tray holds more. Everything else is about the same. But that said my daughter is thrilled she got a Ninja and I am thrilled that I had an excuse to get a new one!

    I was given a ninja air fryer.. loved chicken thighs in it but it just is too much trouble to clean the thing- gave it away.

      I would be more inclined to grill it on the BBQ if possible. Fast fry in a cast iron would work but the size of the steak could be an issue, unless you did it in batches.

      LMNT has 1000 mg sodium. Carnivores lose all water soluable nutrients because we don't hold onto our fluids. I was having horrible pain through my mid section. Turns out abdominal cramps are the symptom of sodium deficiency. LMNT miraculously cured my deficiency and all the pain went away. 👍🤗🥳

      I have a recipe on my blog for DIY electrolyte and so does LMNT, they freely publish their own recipe! The thing is not everyone is up for making it. Have you ever been a full time working Mom with 4 kids? I have and there was no making my own anything at the time. We all have different budgets and different needs.

      sodium is very easy to get from diet though, so adding it in is rather pointless. the magnesium amount is pretty low as to be useless as well. the potassium seems to be the only thing relevant there@@24carrotgold8

      its not that hard to make a DIY electrolyte. Working full time with kids doesn't make it any harder. its much easier than meal prepping but to each their own@@KetogenicWoman

    I followed carnivore and had the worst constipation ever. I increased my fats but it became alarming. How do you cope ?

      I have a BM every single day on carnivore! I use a castor oil pack for one hour every other night and it works like magic! Even when I've had to go away for a few days the effect carries on and I just start using it again when I get back. I should do a video on it, because a lot of people suffer needlessly with constipation. But for now google it! You need a bottle of castor oil and some soft thick cotton I bought a pack from Amazon like this one: amzn.to/3zpuCCm

    My skirt steak came out very juicy. I just hate the rubbery skin on the back. It made it hard to cut the steak into strips.

      Oh, if you want you can take that off with a boning knife before you cook it. Mine didn't have it.

      lol, that shot is from where I used to live when my Mom was still alive and lived with me and grew tomatoes in the yard. I use it for sentimental reasons. I don't eat night shades as I am highly sensitive to them. Sometimes things are not as they seem wouldn't you agree?
