- Oven baked cod with Ritz cracker topping with lemon, butter and parsley is a delicious fish recipe that you can put together in about 20 minutes! Join Eric from Simply Elegant Home Cooking as he demonstrates this New England classic. It is very important to buy the highest quality fish you can find, and be sure you get wild caught fish. The cod can be substituted for other white fish such as halibut or haddock. Also, be sure to use Ritz crackers, which have a delicious buttery flavor and consistency. Other types of crackers will not taste as good!
Ingredients:
-2 pieces of thick cut wild caught cod or other white fish
-2 tablespoons butter
-1 small pack of Ritz crackers (approximately 14 crackers)
-1/2 lemon, cut into slices
-1 large handful of chopped Italian parsley
-Salt and pepper to taste
Directions:
-Remove the cod from the fridge 30 minutes before you plan to cook. Pat it dry with a paper towel.
-Crush the Ritz crackers into large crumbs. This can be done either in their packaging or by placing into a freezer bag and using either your hands or a rolling pin. Be sure not to crush too much. You want large crumbs, not a fine powder.
-In a small skillet, melt the butter over a low heat. Once butter is melted, turn off the heat and add the crushed Ritz crackers, along with the parsley, salt, and pepper.
-In either another skillet or sheet pan, melt a small amount of butter to prevent sticking. While the butter melts, season the cod with salt and black pepper.
-Place the cod into the buttered skillet or sheet pan, and spoon over the Ritz cracker and butter mixture. Do not worry if some of it falls off on the sides.
-Place the skillet into a preheated 375 degree F oven, and cook for about 18-20 minutes or until desired doneness.
-Serve and enjoy with the sliced lemon!
You make disgusting sounds when you eat. I don't like how you have to touch the butter. It is stupid how you squeeze the lemon and barely get it any place, and the classless way you throw it aside. You have kind of gay hands. We could never friends.
Lol you hate everything about the video and yet you apparently watched it all the way to the end!
@@SimplyElegantHomeCooking No. I think what you cooked looked really good. I'll use the recipe someday.
@@nabeelkhan51100 Hahahahaha You are funny. You didn't date a stripper. The stripper went out with you for money, and she could not believe what she was putting up with for your money, and she didn't even care to keep it under her hat because she knew she could walk all over you, and finally she had enough. What you mean is you are gross, gay, and not cool like this guy. Hahahaha
@@nabeelkhan51100 You are such a loser, scumbag, greaseball.
Couldnt be nastier! Crawl back under your rock.
Your cod recipe is simple and looks delicious. I agree that it is important not to skimp on the quality of the fish. Cheap supermarket cod is often tough and bland.
Oh yea...I paid an arm and a leg for this cod but it was worth it!
I have my Sitka Salmon Shares box that has wild caught cod and black cod (sablefish). Having guests tonight and trying this recipe. It looks great!
Serving with a side of Farro, tomato, and basil from Smitten Kitchen and steamed great beans.
(That Hollywood creeper’s comments infuriates me. The world has no room for that hate!)
Thanks so much and that sounds delicious! Thanks for your support on that comment but I honestly got a laugh out of it but yes it is definitely a little bizarre to think that somebody actually wrote such a ridiculous comment!
Put some Old Bay in there and some apple sauce in a little mayonnaise and y'all have an amazing stuffing cut up some crab meat little shrimp little scallops

My sister made this for me and it was delicious! Top food. I felt like I was eating at a fine dining seafood restaurant like the one I grew up down the road in Maine! Loved it! Looked up the recipe for my husband and me to have tonight!
Thanks! I have never been to Maine but I hear this is a very popular dish in the Northeast!
Use the sodium free Ritz crackers better
This recipe is definitely not healthy but yea to cut the sodium you can use those.
Definitely a couple goooorgeous pieces of crusty cod! Cheers, Chef Eric!
Thanks, Chef Paulie!
RUclips might flag you for how you suggestively broke up that bag of crackers....stay strong! Watch out for the cancel culture!!!!
