    For the green beans, I'll destring them prior to cooking. To do this, I break (snap) both ends to remove the strings. Sometimes, they just don't destring. I'll normally cook them in a little frying bacon with a bit of salt and pepper. Bacon is king here in the southern US. To add to my thoughts since I'm watching and commenting at the same time. I think the mushroom, to sub for the fried tofu, and ginger would be fabulous. Maybe with a little egg to add some protein along with the soup and maybe a light pickle of squash and turnip

    When I miss Japan, it is often a food memory that triggers the feeling. I love and miss Japanese cuisine. Sharing a meal makes people like each other or as the feel closer with strong bond. Eating the same food leads to trust and cooperation because they feel closer with the feeling of intimacy among those eating together, share the experience with eating and drinking.

    I love rice cooked with sake. I sometimes add a little to regular white rice as well for cooking, it really brings out the sweetness of the rice. I think if ginger is too peppery burdock would go great in this rice dish as well. Shiraae is one of my favourite dishes. I really love a sesame flavoured shiraae with fresh tomato (seeds removed otherwise the shiraae become very watery) it really is a summer dish with the tomato but I like it so much I eat it all year round hahaha My favourite aroma is probably soy sauce and the smell of freshly cooked white rice. As a child I loved the smell of raw sauerkraut (I always ate it raw so my mom had to keep an eye on it otherwise most of it was gone before she could cook it).

      Raw sauerkraut! does it smell vinegary just like tukemono in Japan?? what a healthy child you were!

    • @tamara4557
      @tamara4557 3 года назад

      @@MiwasJapaneseCooking don't worry Miwa san, I was later with watching as well :) Make the shiraae for the tomato with neri goma, some sugar and soy sauce. It really gives it a sesame flavour. I though it was strange when I heard this combination with tomato but it is so good hahaha
      Yes the sauerkraut is very vinegary so my mother usually bought the one made with wine vinegar. I guess it is indeed similar to some tsukemono, perhaps that is why I like tsukemono. As a child I always rather had savoury things over sweets. Still do :)

    What could the tofu in the sesame dressing be replaced with for those of us with soy allergies? Soy sauce is easy to replace with coconut aminos but tofu not so much lol. Could the dressing also be used to coat fish which is then grilled?

    • @MiwasJapaneseCooking
      @MiwasJapaneseCooking  3 года назад +1

      this dish can be made without tofu. instead ,you want to add more different veggies like steamed broccoli and cauliflower! Some of my viewer told me tomato actually go well with this sesame dressing! To make it creamier, feel free to add a little bit of tahini , mayo or even plant basted yogurt should work too! ( I haven't tried but guessing they should be well paring!)
      You can't marinate fish with dressing. it's not saucy enough. I rather grill or Sautee the fish first, then smother this sauce on top. 😀
      I hope this helps!! Thank you for asking!
