With the Nouvelles archetype they represent different aspects of French cuisine within their name, as well as the name of a demon from the Ars Goetia every odd level Nouvelles Ritual monster tend to represent seafood-based recipes, whereas the even level ones different kinds of meats Also, if you notice closely, there are two types of chefs that work in the restaurant with the female chef, who wears the blue uniform, specializing in fish recipes hence why she is on that ritual spell card. Whereas for the male chef who wears the red uniform, specializes in meat recipes, hence why he is on that ritual spell card while both ritual spell cards are generic to the archetype, but you do get bonus effects based off of the kind of ritual monster you bring out through that recipe ritual spell so when you think about French cuisine red and blue Chef uniforms, and all of the demonic connotations it’s literally the hell’s kitchen deck. Also, when you asked about staff recipe, it is supposed to be a reference to what is called a family meal, which is a type of meal that the staff eats at the restaurant that is prepared themselves with things that are either left over from after the night and staff recipes also can serve as a test bed for chefs to try perspective dishes that could be added to a menu later on.
staff recipe i believe is something that isnt on the menu but that can be made with the ingredients available but is something the chef makes for the staff only.. one of the few things I miss from working at one of the only local places with an actual chef.
The card Vanquish Soul Dust Devil makes reference to the fighting game term “Dust” which is an overhead attack that sends the opponent flying to set them up for an aerial combo, which explains why in the card Razen is delivering such a kick that would set the opponent up for an air juggle.
I love Vanquish Soul, never cared for combo or control but mid range has always been my favorite way to play
Every Transcendosaurus Monster is an evolved form of a previously existing LV 6 Dinosaur Normal Monster:
Gigantozowler: Megazowler
Glaciasaurus: Frostosaurus
Drillygnathus: Lancephorhynchus
Transcendosaurus Meterous is the only exception, as it is an evolved form of Xeno Meteorus.

Of the six Nouvelles Rituals their names are a portmanteau of a demon of the Ars Goetia and French Cuisine:

3. Poeltis de Nouvelles: Demon: Botis: Cusine: Poêle
4. Foie Glasya de Nouvelles: Demon: Glasya-Labolas Cuisine: Foie gras
5. Balameuniere de Nouvelles: Demon: Balam Cuisine: Beurre meunière
6. Baelgrill de Nouvelles: Demon: Bael Cuisine: Grilling

konami botched the VS cards here by upping their rarity
Truth be told it’s more of like a marketing ploy, because Transcendosaurus is more of an engine, then an archetype so as a result, that’s why it had the fewest ultra rares with only Ground Xeno, Nouvelles is more of a meme archetype, and isn’t perceived, as being very in demand so they had the second least amount with only two ultras and soul by process of elimination Vanquish Soul is seen as being arguably, the best archetype of the three, and as a result to help with Konami, making some money off of the set, that’s the reason largely why it got most of the ultra rare slots. In my honest opinion, if Transcendosaurus would’ve been more of a deck, they probably could’ve gotten more ultra rares, and that would’ve taken some of the pricing off of Vanquish Soul.
