My parents were born in the Azores but I was raised as an American with some Portuguese traditions. I was raised on my grandfather's dairy but never learned to speak Portuguese. The family always made linguisa and marcella but never chourico. Thank you and your family for sharing their recipe.
So crazy my family is from San Miguel and Pico I grew up with linguica and Marcella as well my family members from the Azores also had dairy farms my azorian and Sicilian cited family started a Latin Radio Show in Monterey California in the 1930s and then 30 years later both of those families were mixed
Nancy, I just recently discovered your channel and young lady you are bringing me so much joy and saudade. My parents always made chouriço, every year a large quantity. My parents were from S. Miguel as well, my Dad from Vila Franca do Campo and my Mom, Lombinha da Maia. Their married life before immigrating to Canada was in Santa Maria. I was the knotter of the chouriços. My Mom didn’t have a stuffer, she used a funnel and her fingers. She’d do a dozen, and than we’d tie them. That was hard work! All my aunts and uncles here kept up the tradition. My Mom had two sisters here & a brother, they’d take 4 weekends and go from one house to the next making chouriços. All the children would pitch in and have loads of fun. Now, everyone is gone. No one to carry on the traditions and smaller families….we all just buy at Portuguese grocery stores. Saudade is very real.

Wow that was so nice to see all your family helping out. It bring back good memories when I was younger and my parents made chourico too. It’s great to keep our Portuguese tradition alive.
I haven’t made chourico in so many years. So much work. My hands hurt so bad from tying the strings. That was always my job. I have to say that my dad made the best toucinho. He scored the belly fat and made a seasoning paste and then would smother it all over. After smoking it you could slice it and fry it like bacon. So good. Also my mom would throw a piece in when making certain soups and stews and of course bean dishes. Great memories now that my parents are gone

Love all your videos. Have made so may of the sweets. I’m from sao miquel. I’m from Ribeira Quente My husband is from Ponta garca. We live in laval quebec now for over 50 years. We make the chorizos the same way. Every year but in small quantities We will try the mincing of the garlic We would leave them in pieces then remove them. Loved this video. Now we know more from where your family is from.
I wish you had a much much smaller batch version of this as 200lbs is a bit much for me and my family. However, i really did enjoy the video! Thank you for making it.
There use to be a place in Fall River that made the best chourico ever. I was a kid then and unfortunately they went out of business. I miss it. It was fantastic.
That cozido looks so good🤤. Eu adore cozido. I do it myself one of my twins love it. I add pigs feed she loves it. Your mom is so sweet. I use my kitchen Aid with the attachment to make my chouriço. 🤗

Great video. It is hard to find a good accurate recipe like this. When I wrap meat, I wrap in Saran Wrap before butcher paper. I find it prevents the freezer from drying it out over time. I don’t think these last too long in the freezer though.😊

Hi, I enjoy your shows lots! Just watch the making of chorizo it brought back fond memories. I grew up in Bermuda of Azorean heritage and married into an Azorean family. In Bermuda there was a rice sausage made like chourico but with rice added. We would love to find a recipe but no one today is familiar with it, not even my husband's family in Massachusetts. Might you know it? Really enjoy your cooking and have tried many of your recipes. Anthea DeSilva

Nancy i just found your channel and i am so happy i found you. As for this Chouriço recipe, what temperature do you think the smoker should be and also what do you use to smoke the chouriço? I am new to smoking and making Chouriço and going to get my husband to help me but we are newbies. Please could you give us an idea on the above. Thank you...your channel is amazing, a new solid fan
Hi Raquel, the Chouricos were in the smoker for about 2 to 2 1/2 hours. We used dry wood logs to get the smoker to start on a high heat. Eventually the heat dies down to a low to medium heat, at that time you will see more smoke. At that time, we place the Chouricos in the Smoker. Remember you are using the smoke from the heat to smoke the Chouricos. During the 2 to 2 1/2 hours of smoking the Chouricos, you may need to add more logs gradually as you want the smoke from the heat to continue creating the smoke… to smoke the chouricos. On the video I show a clip of the logs in the smoker. You will see that there are no flames… mostly smoke… that is a low to medium heat. Thank you for your question🥰

They look very good. Great video, but any idea what the smoker temp is? I am fortunate to live near Fall River, MA where you can buy chourico from several authentic acoreano butchers who make fantastic chourico. If you are ever in the US I recommend you check out the Portuguese restaurants in SE Mass.

Great video. It is hard to find a good accurate recipe like this. When I wrap meat, I wrap in Saran Wrap before butcher paper. I find it prevents the freezer from drying it out over time. I don’t think these last too long in the freezer though.😊
I forgot to ask if you have a video bc up to show how to make the pepper sauce? I use the ferma pimento. I would like to make my own pepper sauce.

Hi, I enjoy your shows lots! Just watch the making of chorizo it brought back fond memories. I grew up in Bermuda of Azorean heritage and married into an Azorean family. In Bermuda there was a rice sausage made like chourico but with rice added. We would love to find a recipe but no one today is familiar with it, not even my husband's family in Massachusetts. Might you know it? Really enjoy your cooking and have tried many of your recipes.

Nancy i just found your channel and i am so happy i found you. As for this Chouriço recipe, what temperature do you think the smoker should be and also what do you use to smoke the chouriço? I am new to smoking and making Chouriço and going to get my husband to help me but we are newbies. Please could you give us an idea on the above. Thank you...your channel is amazing, a new solid fan
Hi Raquel, the Chouricos were in the smoker for about 2 to 2 1/2 hours.
We used dry wood logs to get the smoker to start on a high heat. Eventually the heat dies down to a low to medium heat, at that time you will see more smoke. At that time, we place the Chouricos in the Smoker. Remember you are using the smoke from the heat to smoke the Chouricos.
During the 2 to 2 1/2 hours of smoking the Chouricos, you may need to add more logs gradually as you want the smoke from the heat to continue creating the smoke… to smoke the chouricos. On the video I show a clip of the logs in the smoker. You will see that there are no flames… mostly smoke… that is a low to medium heat.

They look very good. Great video, but any idea what the smoker temp is? I am fortunate to live near Fall River, MA where you can buy chourico from several authentic acoreano butchers who make fantastic chourico. If you are ever in the US I recommend you check out the Portuguese restaurants in SE Mass.
