Okay, so after looking at 1-tower, it was replaced with a WORLD 9 level, which are very hard challenges unlocked by collecting all the star coins in a world in the base game, so that might have been the reason you were struggling. Also, the cheep chomp can go out of water because it was placed in a location that is deep underwater, so the developers decided to not bother with coding that unlike all the other fish. Finally, the jellyfish seem to grant light in dark rooms, which must have been why a white square was blocking your screen.
