Pasta Grannies enjoy Ernestina's spinach and meat cannelloni!

- There are lots of recipes for cannelloni, and this is Ernestina's: she makes a spinach dough, fills them with a pork, chicken and cheese filling, and then bakes them in a mixture of a pork and chicken ragu and béchamel sauce. It's easy to do, even though it involves several stages like lasagna.
Ernestina makes a large quantity of dough - I think if you halved her quantities you would still have plenty for 6 people. Thus use:
400g 00 flour, 3 eggs and 25g of spinach (cooked, chopped, squeezed dry and blitz it with the eggs before adding to the flour)

I own the pasta grannies book for this recipe and for once I must say that I have a small quible: the book does not state to cook the pasta before making the rolls. The dish itself is absolutely lovely though.

Her bowl of cold water looks exactly like a huge 8 quart bowl I was given years ago. It says Italia faintly on the bottom. Would anyone know where to purchase products from the same maker? I love my bowl and have cooked many home made sauces in it over night in a low, slow oven. The wonderful women are treasures!

joybmassa It is a more cordial, more loving and warmer goodbye than in other countries. And this also applies to the arrival not only to the goodbye ! And in Southern Italy all this is even warmer !

Yes, this way of making bechamel always ensures a smooth sauce. I've been doing it this way for 30 years and haven't had a lump yet! If you add grated cheese into it when off the heat, it's all the yummier.

Why do anything if you're not gonna put your heart into it? If not, you may as well just be dead already, cuz that's the way you're living if you're living without passion!

I bought pasta grannies cookbook off of Amazon based on this recipe. We tried it it was totally amazing!!! I had a problem following the recipe from the RUclips a little bit so I decided that I just was going to go out on a limb and buy this cookbook. however I got the cookbook in the mail today and I cannot find this particular recipe anywhere in it can somebody advise me if it's in the book and if so where I can find it? I am referring to Ernestina's spinach chicken cannelloni. Yummy

Ms. Vicky, no doubt again as to best recipe of the week on you tube, looks absolutely delicious. You asked me about what i was teaching my 2 grand daughters 6&3 what to cook & this will be a recipe for them. I know it is funny , but they like spinach although broccolli is still their fave. I'm going to try and introduce them to broccolli rabe sauteed in olive oil with fresh garlic & shallots, & broccollini, we will see how it goes. They are such good girls, they call me Pop-Pop, my wife is called nana, but she gets aggraveted cause they hang with me, lol. God bless all & please stay safe ladies.( btw, i still am teaching them to cook appalachian meals which they like)

Another excellent episode. I'm always amazed at how many steps and pots and pans a Pasta Grannie is willing to go through to get her special dish. I wonder if any traditional recipes would skip cooking the pasta sheets and go straight to filling raw dough and then baking. I love Pasta Grannies!
