91 year old Maria shares her lasagna recipe with Pasta Grannies!

  • Maria passed away on 12 December 2021 aged 92; this video was made in 2020. She made this lasagna for her customers to take away. Over the years she adapted the recipe and the result is a green lasagna, layered with a pork ragù and béchamel sauce. This is Maria's second appearance for Pasta Grannies!
    Adjusted to feed 4 -6 people:
    For the pasta:
    ● 250 g 00/plain flour
    ● 110 g eggs
    ● 30 g fresh spinach, leaves only
    For the ragù:
    ● 2 garlic cloves
    ● 3 sage leaves (wrapped in muslin)
    ● 200g unsmoked pancetta, diced
    ● 1.5 kg minced pork (loin or shoulder)
    ● 1.5 litre beef stock
    1 heaping tbsp of tomato paste
    400 g passata
    ● Salt, pepper
    For the béchamel:
    ● 30 g butter
    ● 30 g flour
    ● 1/2 litre whole milk
    ● 1/2 a nutmeg, grated
    ● For sprinkling: 50g Parmigiano (or more, if you feel like it)

      No matter how much evil there may be in this world, there is always goodness waiting to be found within others, and within you.
      Whether it comes from paying for someone's bus fare when they come up short, helping a stranger find where they want to go when they're lost, or simply paying gratitude to being able to wake up to see another day, there is always a chance to either find the light of this world, or make a little for others to find.
      Even if you forget this, and lose your hope to the darkness, you can always find it again, when you find the strength to keep pushing forward

      Diet, that's one of the reason. My grandparents did not eat anything other than what's made in home. They were quite active in the 80s just like many of their generation. The irony is that they weren't well off, infact they would be considered lower middle class today. I still remember during the early 2000s as a kid people used to get shocked knowing someone in their 30s had issues like high BP, heart attack etc becuase for them these are things that old people get.

      I am Italian American and I cook every night like my mom did. Always on holidays and birthdays. We also sit at the dinner table with no TV on and no interruptions. It is only about the moment. My husband‘s family is Scottish/English and they just love sitting at the dinner table eating Italian food, talking and drinking and just enjoying the moment with the food and the company. That is what we are missing because of social media. We do not answer the phone at dinner time it is all about the people at the table. Everyone needs to get back to the basics of how important it is to be with your family and your friends. Social media is not the end-all to life. It actually steals things that are enjoyable.     As a person who knows how to cook and once lived in Italy, I can say with certainty -- Maria is the real deal! For traditional Italians, cooking is a drama which they take very seriously, and local ingredients are a must! Thank you for this video; I sincerely love it!

    As a neuroscientist i can't help but state the obvious. This is how you prevent alzheimers/dementia if we're lucky enough to get to that age. Whether it be reading books, staying active, working or cooking, your brain is a muscle. When you stimulate your mind you're working it constantly. This is why she's lucid at her age and from what i can tell in a short video, not even a sign that she's at all senile, so impressive.

      We also have a lot of elders in Africa, I think its about food and life quality, yes the US and other European countries are on the "1 world" category while we are on the third place, but we eat a lot of natural, organic and plant based food.

    Complete respect for a 91 y/o chef who isn't afraid to make lasagne her own way and is happy to share her techniques and recipe. Making pasta a little more healthy w/spinach is a great idea.       The reality is that the traditional recipe requires spinach pasta. The only step that is missing is 50% minced beef (cartella) but she used beef stock and got away with it, very clever!

I am delighted you like Maria's video; it's definitely not what is now considered the traditional ragù, but it is not so surprising if one reflects that pork was/is cheaper than beef.     91, still so strong and vibrant. My grandma is in her 80s and suffering from knee problem doesn't walk as much so she rarely cooks anymore. I miss her cooking. This nonna is literally still working. Amazing lady!

    I am Swiss and Italian. My grandmother was from a village in Campania; southern Italy. I still remember her waking up at 5 in the morning and prepare fresh homemade pasta (fusilli).
    She did this her entire life.
    Always waking up so early to make fresh pasta for us. ❤️

    I tried my best to put this recipe in writing. Please let me know if anything is incorrect and I will fix it. **Update** I made this and it was phenomenal! I have edits added to the recipe.
    LASAGNA
    Makes 2 - 9 x 13 pans (25 x 35 cm) [1/2 recipe below]
    For the Pasta:
    4 c. (1 kilo) 00 flour (unbleached, white flour if 00 is unavailable)
    1/2 c. (100 g) fresh spinach, stems removed
    10 eggs
    For the Ragù:
    2 garlic cloves, 2-3 sage leaves (wrapped in muslin)
    1/4 c. (50 g) unsmoked pancetta, diced
    2.2 lb. (1 kg) pork loin, minced
    2-3 T. olive oil
    Salt, to taste
    4 c. (1 liter) beef stock
    14 oz. (400 g) tomato paste
    For the Béchamel Sauce:
    4 c. (1 liter) whole milk
    1/2 c. (100 g) butter
    1/2 c. (100 g) flour
    1 t. (1/2 a nutmeg), grated
    For Sprinkling:
    1/4 - 2 c. (50-400 g) Parmigiano-Reggiano (or Parmesan if this is unavailable)
    Pasta Directions:
    Pulse together flour and spinach. Dump on counter. Make well in center and add eggs. Turn and knead until smooth. Rest for 30-60 minutes.
    Roll out dough THINLY into a circle. Using flour when needed. If dough tears just stick it back together.
    Ragù Directions:
    Roughly chop garlic cloves & sage leaves. Wrap in muslin and put this in with the meat when it is finished cooking.
    Fry pancetta and pork loin. Add enough olive oil just so meat doesn’t stick.
    Season the meat with salt to taste and add beef stock to cover the meat. Add tomato paste (rinse out the can with a little beef stock). Simmer for at least an hour. Remove muslin packet.
    Béchamel Sauce Directions:
    Warm milk. Make roux in separate pot with butter and flour. (Melt butter, add flour and whisk). Add nutmeg. Gradually pour in milk while whisking all the time for a thick sauce.
    Compile Lasagna:
    Cut pasta a little larger than size of your pan (as they shrink). Boil 2 min. in salted water. Gently remove and spread flat on counter to cool.
    Place 1/3 of ragù on bottom of pan and place a pasta sheet on top. Add rest of ragù then some spoons of Béchamel sauce and plenty of grated cheese. Add second layer of pasta. Top with Béchamel, cheese and dots of butter. Cut in half and then half again to help it cook. Bake at 375º for 20 minutes. Each pan makes 4 large servings. (Or cut into 8 servings before baking as 6 servings were too large.).
    1/2 RECIPE for a 9 x 13 pan.
    For the Pasta:
    2 c. (500 g) 00 flour (unbleached, white flour if 00 is unavailable)
    1/4 c. (50 g) fresh spinach, stems removed (I added 1/2 c. and liked it so much I will do that again)
    5 eggs
    For the Ragù:
    1 garlic clove, 1-2 sage leaves (wrapped in muslin)
    1/8 c. (25 g) unsmoked pancetta, diced (I think I would double this!)
    1.1 lb. (500 g) pork loin, minced (I used 18 oz. pork tenderloin and used my mom's old fashioned meat grinder)
    1-1.5 T. olive oil
    Salt, to taste
    2 c. (500 milliliter) beef stock (I used beef bone broth, nummy)
    7 oz. (200 g) tomato paste (I used a 6 oz. can and it was fine)
    [Next time I am going to sauté 1/3 c. onion in olive oil for 5 minutes and then add 2 minced garlic cloves and 2 minced sage leaves and cook for an additional minute--rather than wrap them in muslin as I couldn't taste them.
    For the Béchamel Sauce:
    2 c. (500 milliliter) whole milk (I used 1% milk and it was fine)
    1/4 c. (50 g) butter
    1/4 c. (50 g) flour
    1/2 t. (1/4 a nutmeg), grated (I used 1/2 of a nutmeg or 1 t. and loved it)
    For Sprinkling:
    1/4 - 2 c. (50-400 g) Parmigiano-Reggiano (or Parmesan if this is unavailable)

      I think it should be noted that 10 eggs should come to about 550g. Meaning try using Jumbo eggs (in the US) if you can. Or more appropriately adjust the egg and flour so as to be not too dry (or wet). But I think the danger here is too dry. Good job!

    So I actually made this for dinner tonight. It was amazing. The ragu is so easy to make and full of flavor! I also made the pasta the same way she did by adding the fresh spinach to flour and then blitzing it - genius I tell you!       I don't know what you do consider a "traditional" lasagna, but this one is 100% traditional. There are only few variations to the seasoning of ragù, but the core is pure, unadulterated lasagna

I only meant, growing up in an American household I’d only been taught lasagna with plain noodles, this, with the spinach ground with the flour was very different for me and looks absolutely wonderful.     My grandma was taken from us too soon but I’m so grateful my mom passed me her mother’s recipes before I got married. Just the way my grandmother cooked and all the generations before her. It’s truly a gift although I’m sure my abuelita’s would taste even better. It’s the heart in a grandmother’s cooking ❤️

    RUclips was recommended. This is a video that shouldn't be watched at evening. The more I watched it, the hungrier I got.
    It looks like the most delicious lasagna in the world.
    This is how my grandmother used to stretch the dough with a cotton swab, but it wasn't lasagna, it was Udon.

      Funny, the first thing I thought of when I saw the thumbnail was Gordon Ramsey tilting the plate, so all the grease drips down while he gets angrier and angrier then blabbering words like "bland" "look at all that grease!" etc.

      No offense, but I have to not listen to Gordon. Does not matter if good reason for anger, still takes it too far, and dang, listening to him depresses the earth out of me. Then, using the Lord's name in vain. Please do not use His name unless talking to Him or about Him. Dead seriously. I'm not saying that to judge, for I am nowhere near perfect. Just discerning....
