Hi! I am Joconde.
This video is about a blueberry cake.
Spreaded blueberry sauce on castella with moist and firm texture.
I picked the castella for the cake sheets.
And after icing with cream cheese frosting mixed with blueberry sauce,
I piped the whipped cream petals around the cake. It finally looks like a lotus flower.
A small amount of gelatin is added to the whipped cream to make it stable so that the shape can be maintained.
This recipe of whipped cream with gelatin is very easy.

230g blueberries
43g sugar
5g corn Starch
30g water
12g lemon juice
♥︎ Gelatin Whipped Cream
2.5g powdered gelatin + 12g water (can be used the same amount of gelatin soaked in ice water)
40g warm heavy cream
240g cold heavy cream
30g sugar
♥︎ Castella cake sheet
3 eggs (156g)
2 egg yolks (36g)
120g sugar
8g honey
1g salt
50g plain yogurt
20g butter
20g rum
105g cake flour
♥︎ Blueberry Cream Cheese Frosting
260g cream cheese
35g sugar
175g whipped cream
86g blueberry sauce
2g lemon zest
♥︎ Sugar syrup
75g water
25g sugar

You buy cake flower :)
This channeled recipes are often very precarious, so it is best to just buy cake flour. But if you follow your run of the mill recipe, or maybe a Martha Stewart one (I recommend) this is how you make cake flour: (basically) with a starting cup of all purpose flour, you take out 2 tablespoons of the flour. And replace it with 2 tablespoons of corn starch.
