I love crab, I went to red lobster for my 25th bday this year and got snow crab legs, so good. It had been so long since I ate crab legs so I had to re learn how to crack the legs in the right way so you get big chunks or meat instead of tiny pieces when you butcher it lol.
Their legs are like rubber because they boil them, rather than steam their crabs; also very salty. Good shellfish is always sweet...good luck cracking them though... As u can see the rep had a tuff time getting the claw out in 1 piece...When u cook them right they come out easily, no struggle...

Don't add ANY seasonings, just a little water to a boil...then when cooked get ur butter n lemon ready... to get a nice thicker buttery sauce add 1/2 teaspoon flour or cornstarch to 2 sticks cold butter as u slowly warm it up on simmer...keep whisking till no more flour... u have to whisk it as it slowly melting, otherwise if u don't break the flour or cornstarch it'll turn clumpy... at its melting point u can also add fresh squeezed lemon juice n keep stirring till smooth
TOM BOYD I'll try steaming them tomorrow and see if customers like that more. I work in a restaurant and we boil our crab legs. The advantage to boiling is that it takes only 2-3 minutes and the seasoning cooks into it. What's the advantage of adding flour/cornstarch to butter? Does it taste better?

Move to the next joint, break and snatch. If the meat does not come when you get to the big section the snatch should free the cartilages and some of the meat. At this point move to the middle of the big section and break in the middle. You should able to pull the remaining meat out intact if it is cooked properly. As a side note if meat is not free, take one prong of your fork and use it like an old fashioned can opener to open the leg. If performed properly the only meat you should ever have to pick is the knuckle or the body.
