Something we cannot change but it grates on me is the trait "Precise Strike". This build already has over 100% crit change, that guaranteed crit on Opening Strike feels such a waste!!! :D
I wonder if we replace some of those Berserker parts with Valkyrie parts, enough to get the crit change to about 90%. At that point, those guaranteed crits will cover some of those missed crits.
Please try it if you have legendaries, I don't sadly, because I know the DPS will be overall lower but the HP should be much higher. If you can, please let me know the DPS numbers before and after.

It's like you say. It's just going to result in a DPS loss. We have a ton of ferocity and damage boosters on this build, but it's all for nothing when you don't crit. And vitality after a certain point is just wasted stats. You want enough health that you don't have to play defense every time a champion sneezes at you, but for most scenarios either you want to maximize damage to end the fight quickly or you need better overall sustain in the form of damage reduction/health recovery. In the former case, you take longer to kill which means you take more damage. Is the extra vitality enough? Probably. But if you could have just ended the fight faster you wouldn't have needed it. In the latter case, vitality isn't what you need. You run out of health either way, so what you need is something like Carnivore to recover damage taken or damage reduction like Forest's Fortification, protection, barrier, unleashed pet, etc.

Man, this is more or less the build I am working on atm but I want to replace the axe with something else more fun. Axe damage is nice, the utility of 5 can be nice but the fact that it grounds you in place feels so bad for me I just can't stomach it. Any idea?

Unfortunately, axe offhand is just the best choice. The only other option is warhorn, which is strictly a downgrade.
Try using axe 5 in combination with Forest's Fortification. The 10x stability and 50% damage reduction make it a pretty safe play and with each hit reducing the cooldown on FF, axe 5 has natural synergy anyway. When FF is on cooldown you can use axe 5 during breakbar stuns instead.
Edit: You could also use hammer rather than sword, but it doesn't work with this build. You can't source quickness from Enhancing Impact with hammer because you have to unleash pet to access your CC, which produces stability rather than quickness. So you pretty much have to take Let Loose with solo hammer builds.
