4 th year growing celery here in MA. I have learned they need ALOT of water in order to taste good. I am learning this year that the thin stalks might be a result of nutrient competition as my celery that was grown to close to neighboring plants was thinner compared to my celery that had good spacing. The paler colour can come from blanching your celery. bundling them with string as they mature restricts light to the center stalks and gives it a light colour and flavour I think.
If you just cut them at the base, they will regrow and you can get a few more stalks before they go to seed. I was able to regrow a store celery from the base and it was darker than the original.

@@Cass6 I'm in MA, so also shorter season but PharMama below mentioned giving them lots of water (I could have given them more) and lots of space (could have spaced them out more too). So, I'll be more mindful of those things next year.

I freeze dried my leaves and made celery salt with them 💜

Mine are very narrow stalks to! I can’t seem to grow thick ones in MN.

Do you have to put in freezer after you freeze drie them?
Best to wash your veggies outside in a container. Shame to loose your good soil down the drain.
