I'm a trained chef. Do all those things, but first, before doing anything, pat the turkey's skin & inner cavity dry so it'll grab the softened butter better. Then, roast it breast side down. The dark meat will render its fat into the white meat. Leave a knob of seasoned butter inside the cavity with your aromatics. I inject mine with salted butter & sauvignon blanc, but even if you don't do that you'll have an incredibly juicy turkey as long as it's roasted breast side down.

Now that’s a company that I’d be willing to WORK for! Haha. How much fun those people all have, can you IMAGINE? That was too funny that he new perfectly well they were sent out a notice not to drink and he drank anyway and then he goes, “what’s the problem? Are we not supposed to be drinking because of (Ernie’s? Eddie’s? I wasn’t paying attention to the first names very well) email?” Like IM YEA THATS WHAT MOST PEOPLE ARE GOING TO HAVE TO DO! That is awesome!
James forgot the most important part...always, always, always cook the turkey upside down. Yes, upside down. It helps so the juices go to the bottom - the top of the turkey and where the meat is. It is never dry when you do this.

Love James, but I've discovered the MOST DELICIOUS turkey EVER on the FACE OF THE PLANET. My step-dad smoked a turkey for a few hours on the smoker... that was the most moist, most tasteful turkey I've ever ever had. And people who cook it like James said? I just said "Oh, this is good" to be polite. Sure, that turkey was edible. But did my mouth explode with flavor? No, grandma, it didn't.
James unbuttoning his jacket right before that turkey recipe just tells you how serious he was about it! :D
