thats what i do.i take all the trimmings from the ribs throw dryrub on them.i call this cooks treats.the thin pieces are spicey.i give them out while we wait.i love my grandchamp xd.

Easy Recipe
12 tomatillos
1 onion cut in half
2-3 cloves of garlic
1-2 Serrano chiles
1-2 jalapeños chiles depends on you...
Boil for about 8 minutes
Remove put in blender add cilantro with a cup in a half of water that you boiled and pepper and a pinch of salt and two table spoons of chicken bouillon blend well soon as the pork is browned pour in green sauce simmer for a hour and pig out 😋

Nice cook. Question. Do you leave the heat diffuser as it came to block the heat?
Thanks! Yeah. This grill has a cool little baffle that I leave on. Helps to keep a more even cook chamber temp.
@@RaceviceSmokehouse some guys have put it in bottom up to get better heat distribution but some say it reduces the smokiness
