can you add broccoli and cauliflower, mushrooms to the veggies without them getting mushy after cooking for an hour, hour and a half?
Add those in the last 15-20 minutes of cooking if you don't want them mushy.

You slice the pork into chops and serve on a plate with the roasted veggies on the side.

You didn't mention the measurements of the spices. I guessed one teaspoon.
Actually the cumin look to be more than the dried basil and black pepper. I'm also wondering the spice measurements.
1 tbsp. of cumin
1/2 tbsp. black pepper
1/2 tbsp. of dried basil
