No, you're not biased. Pork is a very delicious meat. But, it has changed from the fatty unsafe meat it once was, to a super lean safe meat of today. We need more people like you to teach everyone how to cook today's pork.

OMG! I know what I am having for Christmas 2023 dinner. I am going to make a practice one maybe next Sunday. I need to talk to my butcher and see if he can French one for me. I've never cooked one like this but I was about licking my computer screen it made me so hungry. Thanks for the video. PS Every time I have ever bought a Amarillys It's gotten little tiny flies. They must come from the store that way. So my wife has always thrown them out. Any help with this would be appreciated. Thank you!
Low and slow for quite a while? This is supposed to be an instructional video. Why on earth would you not be specific about roasting temperatures and times? Also you have questionable knife skills and the method of zooming in and out is annoying as hell obviously, you’re doing it because you don’t wanna make video edits it takes time I get it, but it’s almost dizzying. I could not finish watching the video.
