nice video! I'd love to see at least some of the knives your store has on display. I recently purchased my first Japanese knife, it's a Nakiri, and it cuts vegetables like a monster. Now I need a santoku :D

Great video. I've started practising sharpening my knifes now recently. Starting with the cheaper ones. Some day the Sword FV10 I bought in Osaka this July has to be sharpened... 😊
