    Great video. I've started practising sharpening my knifes now recently. Starting with the cheaper ones. Some day the Sword FV10 I bought in Osaka this July has to be sharpened... 😊

      It's a White Steel #1 Deba, if I'm not mistaken. It's been a while since we sharpened this though, so I apologise for not remembering the length...

      You wouldn't think it at first, but with enough stones, time and patience our sharpener did it! That staff member has also been doing this for almost 20 years, so he might know a few techniques to make it more possible!

    Please do one video about sharpen an Usuba because usuba is much harder to sharpen and to maintain its shape.

    nice video! I'd love to see at least some of the knives your store has on display. I recently purchased my first Japanese knife, it's a Nakiri, and it cuts vegetables like a monster. Now I need a santoku :D

      Fish indeed! The thicker part near the handle is mostly used for cleaving through fish heads, and the thinner side near the tip can be used for filleting work. Of course, they can be used as multi-purpose knives too but they were designed with fish in mind.

      Certainly takes a couple of hours with the amount of stones that we use. The mirror finish or really brittle ones can take a whole day!

      Nice on all counts! We do occasionally use a rotary wheel as well, depends on the knife. For the most part though, it's a series of stones as you see. Always great to see other bladesmiths around on RUclips!

    My grandfather, who was born in 1906 and grew up dirt poor, could sharpen a blade until you are scared to touch it. If a feather had landed on his blade, it would have split itself just because of its own weight. Ok, that might be an exaggeration. The point is, he always used the draw technique instead of push. Sadly, I never could learn that from him. We lost him in 1984 and the feeling of what happened and just losing him early, is just as raw today as it was then. My moms dad died in the line of duty in 1951 or 52. It was a car crash, intentionally killing him, according to some (he was sheriff). My dads dad died in a car crash in 1984. Purely accidental.
