Grilled Pork Kabobs (shashlik)

- These juicy grilled pork kabobs (shashlik) are marinated in a garlicky red wine and grilled to smokey perfection. It’s a dinner recipe perfect for summertime!

Ingredients
4 lb boneless pork shoulder
6 garlic cloves
2 1/2 tbsp onion
2 tsp salt
1 tsp black pepper
1 red onion
1/2 cup red wine
1 cup mayonnaise
1 red bell pepper
1 green bell pepper
1 tsp salt
1 tsp black pepper
3 tbsp olive oil
Instructions
1. Trim and discard any extra fat around the pork shoulder. Then cut it into 2 inch chunks.
2. Place the pork into a large bowl and add the pressed garlic cloves, grated onion, salt, pepper, red wine, and mayonnaise. Combine everything together then cover with plastic wrap and refrigerate overnight or at least 6 hours.
3. Now soak the wooden skewers in cold water for about 30 minutes to 1 hour.
4. Chopped the peppers and red onion into 1 inch pieces then place them in a bowl and seasons with salt, pepper, and olive oil.
5. Place the marinated pork and seasoned vegetables onto the skewers and grill on medium high heat for about 8-10 minutes turning the kabobs 3 times. To make sure your pork is fully cooked, look for an internal temperature of 145 degrees Fahrenheit.

Thanks for the tips about soaking the skewers and using large bowls: I have had to put things into larger bowls while mixing before, so I know how it goes!

Great recipe .I use metal skewers ,they are reusable, durable ,won't burn and won't splinter ..they do get hot so be careful when handling, I like metal because they help cook the meat on the inside ..purchase stainless steel ..

The first batch I made the meat was undercooked when the veggies were done, so on the second batch I did some skewers with just meat and the others with just the veggies and when the veggies were cooked to my liking I pulled them out and cooked the meat until it was nice and seared, and the marinade was fantastic.

can this marinade work with pork chops and what degree in oven?
Hi Jane, yes you can use this as a marinade for pork chops. You can also bake it at 400 degrees F for 15-20 minutes or until the internal temperature reads 145ºF (test with a meat thermometer).
Put oven rack like 3 inches from broiler. Turn on broiler. Add skewers. Flip after like 3-5 minutes. I think I did 5 minutes on either side and it works. Tastes like summer any time of the year.
what was the weight of the pork?
I used a 4 lb pork shoulder
The only surprise was your use of mayonnaise in your marinade. Typically oil and herbs and spices, chicken might utilize yogurt. Thanks for your version.

Hi :) You can also use pork tenderloin. Technically you can grill many different cuts of pork. Each cut will have its own flavor and tenderness. I hope you love this recipe :)
