  • Slow cooked beef bourguignon-stuffed spinach ravioli, finished in butter & sage - one of my all time favourite meals to make and worth having some friends over to share with!
    Ravioli pasta ingredients:
    - 500g 00 flour
    - 4 eggs
    - 2 egg yolks
    - salt
    - additional flour, egg or olive oil as required
    Stuffing ingredients:
    - 400g beef shoulder (cut is optional)
    - bunch of fresh thyme
    - 2 bay leaves
    - 1L beef stock
    - fresh sage leaves
    - 1-2 cups of good quality red wine
    - 1 onion
    - small jar of cocktail onions
    - 100g pancetta
    - 2 big handfuls of baby spinach
    - 2 tablespoons of tomato puree
    - pecorino cheese
    - nutmeg
    Entree Ingredients:
    - kalamata olives (pips in)
    - garlic clove
    - chilli flakes
